I have never heard of Kunafa before, but as soon as I read that it was a desert then I became interested :) Now that is what I like to see, a bit of innovation, using a pair of pliers to rotate the dish 😁 That's my way of cooking!! That's an awful lot of work that goes in to making a Kunafa, isn't it? The cooking process has to be supervised throughout. It almost looked like you were going to need a pair of scissors to cut the cheese at the end 😀

It is indeed optional, but often used in Turkey for kunefe to give it a nice caralemized color and flavor on the outside.

Turkish Kunefe looks yummy... we buy Kunafa from a nearby Mediterranean sweet shop, we just love it, but it looks different..
There different types depending on the countries, yours might be Lebanese or Egyptian style maybe :)

In Iran we have these black metal circles with tiny holes that you put over the flame to evenly distribute the heat. It would help here.

Arabic dessert since the era of the Umayyads .. And it was called at that time "Kunafah Muawiya" named after Caliph Muawiyah ..it is not Turkish.
