Mice can already scale many walls even in gravity. If I had to guess, the mice are probably running on the walls because it keeps them oriented. They're trying to figure out which way is down, but can't, so they grab onto the wall and start running in circles possibly thinking the centripetal force is gravity and that's where they need to go to orient themselves.
I'm not sure about cats or whatever... But I know for a fact that a dog has in fact graced the ISS while the others maybe haven't. The Zero G for most of these animals are the specialised aeroplanes used specifically to teach Zero Grav to Astronauts. It's likely that the dog has in fact been trained on such planes before.

Mice can already scale many walls even in gravity. If I had to guess, the mice are probably running on the walls because it keeps them oriented. They're trying to figure out which way is down, but can't, so they grab onto the wall and start running in circles possibly thinking the centripetal force is gravity and that's where they need to go to orient themselves.
