    Yes, indeed, chef, this is the one I’ve been waiting for. One of the greatest benefits of living in New York City, for me, is the ready availability of fresh seafood. The Fulton Fish Market is perhaps the most well known. It’s kind of like Zabar’s Market as a showplace for exotic food, which is definitely cool, but I actually favor the smaller fish markets in Chinatown.

    Vincenzo, can I please make a recipe request? I'm from Scotland and recently visited Italy (Naples, Montepertuso, Positano, Amalfi Coast in general) and fell madly in love with one particular dish: GENOVESE. In one week I ended up consuming this three times, at three different restaurants, all of which were incredible and varied in the most subtle but amazing ways. The sweetness is maddening and I feel it's one of those one-of-a-kind recipes. I've been making it at home since I returned from Italy, but it would make my year to see how YOU would tackle this dish, as it is noticeably absent from your channel. I'm sure you can show us the 'right way' to do the Genovese. Thank you 😁

      Octopus is my favorite food as well. Hands down. I could never make it tender (I probably experimented at least a hundred times) by just boiling or simmering. Then I got a pressure cooker and after that it was trivial.

    Hi Vincenzo, i love your videos and have learnt a lot of good pasta recipes from you, so thanks in advance! I have a question about this video. Why not boil the octopus separately and then add it to the sauce? I'm just curious about why we cook it in the pan instead of boiling it, cause in Spain we tend to boil it in a cooking pot. Maybe it absorbs more flavours from the sauce when it cooks? Thanks in advance!

      I had Greek neighbour here in Melbourne whose garage would have smoke pour out of it every Saturday night. Then you'd smell the lamb cooking. I had a big fig tree in the back yard, and they'd steal all the figs they could reach. Mother and Grandmother would hoik those things down with umbrellas and walking sticks, and repay us with Baklava and all manner of mediterannean pastries, so it wasn't really stealing.
      Sometimes it sounded like someone was practicing tennis in that garage. A Greek Doctor I used to work with explained it to me. The man was throwing an octopus at the wall to tenderise it. I took a sneak peak and sure enough, bloke is hurling a cephalopod twice this size at the old red brick garage wall. Then, the smokey garage happened. Lots of Rebetika that night. Voices, cars in the street. Monaros, Valiants. Long time ago. Guess it was a big deal. Miss those times.

    Hi Vincenzo, yummi recipe ! QUESTION! > I usually boil octopus before frying it (like 50 mins for 1 kg of octopus)... THis way I always get it very tender. I have never started from frying octopus like you did. Is it better to fry it from the start??? Wouldnt it make the octopus tougher and chewy? thanks for your explanation

    • @vincenzosplate
      @vincenzosplate  ปีที่แล้ว +1

      When it comes to octopus, both boiling and frying can yield fantastic results. Frying from the start can give it a beautiful texture and a crispy exterior, but the key is not to overcook it. With the right technique, you can achieve a perfect balance-tender on the inside and golden crisp on the outside.
