It's becoming popular again with younger people, and I don't think a lot of pro chefs ever stopped doing it.

It's got a great texture that I can only describe as crumbly-ish? Like it shouldn't fall apart in your hand but it's definitely more crumbly than a standard bread. And the top forms into a thin, delicious crust. I make mine with jalapenos baked in and serve it with honey (the only proper cornbread IMO).
