Fun fact: if you're lactose intolerant, eat cheese that's aged 1 year or older. At that point, the lactose has aged out of it.

As someone who is lactose intolerant, cheese barely affects me. Most of the lactose is drained off with the whey, only super creamy cheeses like brie really cause any reaction at all.

I nearly RAN to my local cheese shop when they announced they had the Meredith Dairy marinated cheese. They let me try it and affectionately call it the "Crack Cheese" and I FULLY understand why. 10/10 you NEED this cheese.

For any cheese beginners: those strong or challenging cheeses can be enjoyed by spreading a very small amount on crackers or bread, and can be a great pairing with things like fruit/jam. That way you can enjoy the cheese without being overwhelmed, since the carbs will cut the intensity. And they can be *incredible* mixed into a pasta dish or sauce! Plus, using less cheese per bite makes the purchase last longer lmao.

Yeah. It's the same with the sürstromming (the fermented fish used in "let's-try-to-eat-this-shit" videos). The Swedes open the tin outside and then do a thin spread over sliced bread and eat it under the sun. No one eats it inside. Maybe the garage if it's raining out.

...This is my ultimate comfort video. The amount of times I've rewatched is embarrassing...
I got to work along side cheese mongers for a few months and have thrown together a few cheeseboards. The marinated goat cheese ain't no joke, it is PHENOMENAL, and is a real show stopper on warm focaccia. There's also a goat cheese called Drunken Goat that is a goat cheese aged in wine. Mild in flavor, quite tasty and an all time favorite.
Fun fact: Cheese that's been aged more than two months loses its lactose.
Ill inform my lactose intolerant pals.
