    Welcome to my FREEZER CHALLENGE #2 video 😃I am continuing my ongoing theme of "USING UP MY PUMPKIN" LOL My week started strong and then fizzled. It's hard to keep cooking when you aren't feeling too hot! 🤒 What are your go-to meals when you are sick or feeling crappy?? Ramen is great...for awhile...but...I did manage a few great meal ideas!     Oh I absolutely love thunderstorms I always have. Growing up we lived in a high-rise apartment and I drove my poor mom nuts because every time there was a storm I wanted to stand by the window and watch. I can’t tell you how many times I heard get away from the window, we’re going to get struck by lightening ⛈⚡️

      It was nice to finally hear some rain 🌧 after the heat we had and it doesn’t seem like the lightening started any big fires 🤞🏼 We do love the yard in the summer🧡

    I would make stuffed pepper soup with the frozen peppers. And if I was canning, rhubarb-pineapple-pepper jam (with a mix of regular peppers and hot peppers).

    We visited my aunt and she made a new meal she thought we would like - pancakes with turkey gravy instead of syrup. It was so very good - surprise, surprise as Gomer would say. I've made it since when I had leftover turkey gravy and still think its great. It inspired me to make a savory bread pudding which also turned out delicious. I need to make that one again - I'd forgotten about it till now. YUM I just read your comments and they have some really great ideas! I need to read them every time.

      Wow! I wouldn't have thought to try that but why not?! Almost like a biscuit and and gravy they make in the USA, right? Yes...bread pudding! Savory bread pudding was suggested in the pantry challenge and I never got around to it...I do have that extra bread in the freezer :) There are loads of great ideas in the comments! I love our lovely community sharing meal ideas

    Cover the quick bread with tin foil during the last minutes of baking if it's getting too dark on top before the inside is completely baked.

    Jessica try making a homemade vegetable beef soup! Then at the end of cooking the soup you can add in that small amount of noodles you had left. Serve with some cornbread. One thing you can do with hot peppers is make some Mexican cornbread ( just add to regular recipe: diced hot peppers, cheddar cheese, cream style corn and ground sausage or beef...I prefer sausage to beef). Another thing you can make the soup out of ground beef and make something that my father said they had in the Air Force “SOS”. You can imagine what guys in the armed forces called it! Lol. You could also take the gravy, add the beef and heat it. Next cut open a loaf of French bread, lengthwise & butter it. Place in oven until it gets a little crispy. Pour the gravy and meat over the bottom half of loaf. Top with shredded lettuce, tomato, and anything else you might want. I think Mayo would be better on the bread instead of butter or both. This is called a sloppy poor boy! Wonderful with French fries and dill pickle spears. Feeds a lot or few that are very hungry! Messy eating it, but very good. If you are an onion eater slice a sweet onion and put on it or on the side! Also, the cherries you have would be great in a jam! The cherry jam is very good on pork loin, ham or chops. You can make a sauce with a little soy sauce and garlic and jam. Baste the pork and serve rest at table. I would use the hot chili peppers, garlic to make a hot garlic chili sauce. Really good in dishes. I have made strawberry bread before with fresh strawberries and it comes out with wet spots too. I love strawberries, but prefer them in a fresh strawberry pie. It is easy and refreshing on a hot day. You can use your cooked pumpkin or squash to make: cakes, pies, muffins, scones, biscuits or even fudge out of it as long as you drain juice from it. Hope this gave you some different ideas.

    Hello! I had an idea to do egg rolls with the shredded carrots, cabbage, eggs, and peppers. Adding meat is optional. Fry them up and you've got an appetizer! Maybe you could use the plum sauce for dipping, too.

    I don’t know how you turn the smallest bits of food (like that pot roast) into a huge dinner. I would of stuck that pot roast in the fridge and thrown it away the next week because I would have forgot it. I too use our dinner for my husband lunches the next day. You are so creative and amazing!

    Hi Jessica! I have to admit, I’m envious of your rain! It’s very dry here in Texas. The soup looked fantastic! The poblanos would make a great chile rellano casserole. I hope you feel better soon!

      Hi NM Native! Rain is ok...as long as it's not tooo much rain. We have been pretty hot and dry so I'm sure that the garden loved it (although it did knock over a few corn!) I'll check out the chile rellano casserole...I think you might have mentioned it before but I'll brush up! Might be fun to try :D

    Funny Jessica, I used up my frozen squash this past spring and canned the Thia red curry pumpkin base that only needs the coconut milk added when I open the jar and heat it. It also made it into my favorite canning soups collection. Good to know the pablanos don’t do so well dried.. I’ve got a bunch growing so I’ll figure something else to do with them. They very well May make it into a queso cheese dip after roasting.

      I've been eying up that canning recipe for this year! It looks like a great easy meal. I should say that it didn't work for me but it might work for someone else lol I wanted dried ancho peppers that I could grind up but they never turned that burgundy colour I was hoping for...

    if you do the pot roast again if you have frozen peas you can mix those in or cook them just for a side. I always like pea in stroganoff

    I loved the pumpkin squash noodle soup! I would have left the curry out, though, because I don't care for that, and would have certainly used all the noodles. i think I might have put some yogurt or sour cream on that pot roast noodle dish. Also, I LOVED hearing the weather updates and seeing the beautiful view of your back yard. Love the videos!

    I get so excited when I see you posted a video! I hate cooked peppers. They taste bitter. Only eat them raw. Hubby loves cooked peppers. Here’s what I do for him. I make onion and pepper packets for steak or pizza and such. Your pita bread would make a great crust. Steak, pepper, onion, French fry pizza. I dehydrate too. I also can. You can make either a big batch to can or a batch for a meal now. Pepper soup. Hamburger, peppers, beef broth, tomato soup, spices. Cook and serve/can. If now, add rice. Canning…add when you heat it up. Veggie soup..now or can. Add whatever meat or none. This is a good way to use up tomatoes. Put whatever veggies you have in it. You can add rice, noodles, or barley to this when ready to eat it. He likes to take either beef chunks, hot dog pieces, or kielbasa pieces or bacon and put it in a pan with peppers and onions. Fajitas are always a winner. That pasta dish you just made would be good adding peppers and onions. Pepper jam for canning. Good luck! That’s a lot of peppers! 🫑

      Thank you so much for your thoughtful suggestions Carol! It is a lot of peppers to use up AND I'm starting to get peppers coming in from the garden as well!! I don't think that this year is going to be as good a year as last year was though. I'll have to check out all of your great ideas! :D

    A suggestion for the beets if you like borscht is making borscht inspired perogy filling. That's what I did with extra beets.

    I hope you're feeling better. That storm knocked out my power for almost a full day before it made its way to you. It was a crazy storm! I've never done it, but you can make a poblado cream sauce with some of your yogurt to serve over chicken or pork, possibly in tacos or quesadillas or fajitas to use up some other peppers.

    Glad you tried strawberry banana bread. The recipe I have has the strawberries mashed the same as the bananas - it’s from the Company’s Coming Muffins and More cook book. During strawberry seasons I’ve made packages up with the strawberry and banana mixture already mashed together and never had an issue. I think I will try the recipe you used to see if we like it too.

      Hi Kathi! It was great but I'd love to try it with it all mashed together! I think that it might have solved my little problems with it lol That's a great tip to freeze mixtures to use for quick breads! It was a great suggestion and I really loved the strawberry banana flavour :)
      Update: I even have that cookbook LOL too funny! I love Company's Coming Cookbooks

    Your grapefruit juice and leftover berries & fruit ect can be blended down and boiled for a mixed fruit compote instead of a smoothie and you can eat it on your toast with the yogurt lol...or turn it into mixed berry syrup..but hey you do you and this stuff your making is interesting 😊

    I feel like eating food from the freezer always takes forever... it's taken us over two months just to eat down what was in our fridge freezer (we've been prepping for a move and trying to eat down the pantry/etc)

      I think it’s especially hard because it’s not really soup season. It would be easy just to dump it all into soups but it’s a bit hot for that right now. These ideas always seem to take longer than I think lol

    What do ground cherries taste like? I've never seen them here in Australia.
    I freeze my banana very different. I remove the peel, then cut into 1 inch pieces and then bag and freeze.

      Hi Lee 🙂 They are also called Cape Gooseberries and Husk cherries. I think it tastes like starfruit if you’ve ever had that but I’ve seen it described as a mix of pineapple, strawberry and green grapes 🤷‍♀️

      Yes I think so too. I might try really drying them a bit before adding them to things if I try again but frozen fruits are always very wet...

    haha if you have any pumpkin left look up first nations recipes specifically ones in America there's a lot of pumpkin and corn soup recipes especially among the Iroquois lol

      @@JessicaWanders no problem and the weird history TH-cam channel I watch them a lot for humor and smartassery history..but their food history things like this segment I saw on great depression meals but they just did a segment on native American foods and had quite a few pumpkin dishes..and they were pretty spot on..I'm half native American and I'm aware of some of the foods but haven't had too many and I'm not aware of any pumpkin recipes the Cherokees might have I'm sure we have them I'm just not aware..and I'm not too knowledgeable about it since I was raised by mom and not by my old man or his bunch ..lol..so I can tell you about frybread and pemican and deer stew or bison steak..or hickory nut soup..but you might want to see that weird history thing for pumpkin recipes..or talk to any first nations you know..I'm still getting to know that half of me..but that's a lot of people here and in your country too I'm sure 😊

    I preserve my bananas both in the peel and off. My in-peel bananas are for my quick breads and muffins. My peeled ones I cut into chunks and wrap in wax paper before freezing them, and I use them for smoothies rather than using ice.
    As for weather, this has been an unusual summer. I'm in Nevada. Normally we're baking hot with lots of smoke from nearby wildfires. The smoke gets so bad here that we have had "smoke days" on which school will be cancelled and the Natl Weather Service will advise us to remain indoors to avoid inhaling ash. This year, however, there's no smoke. We've had a decently smoke-free summer for the first time in over 7 years. We still haven't seen a lot of precipitation, but the southwest monsoons have actually sent us a bit of rain in the northern region of the state. So, I can't complain too much because I love the desert rain, and I live in the high desert.

      Mmm banana ice cubes is a great idea! I do always use my in-peel bananas for baking but that's usually what I want to use my frozen bananas for. I love the banana ice cube idea though!
      I've been crossing my fingers and toes that it doesn't get smokey this year! We've had a few big fire starts but everything has gotten under control so far! I love the desert too! If you are interested we live in the area around Kamloops which has areas classified as semi-arid and desert at the very northern reaches of the Okanagan Desert (one of the only desert regions in Canada!) I usually love a good summer storm and downpour but lately things have been on the extreme side of things :( It's great having you here commenting Micah :D

      I always freeze any too brown banana for baking or pancakes but never thought to use them as the ice in a smoothy - great idea!

    Lol...laughing when you had to keep cooking the strawberry / banana bread. Yes, the frozen strawberries will add time, but also moisture. Think of something similar to apple fritters. I'm curious, did you lower the oven temperature 25 degrees, because you used a glass pan?

      Hi kathryn! So true! I never have lowered the oven temp for glass pans and I use them a LOT hmmm It wasn't bad...just more time than I was expecting lol

    Maybe try blueberries instead of the strawberries in the bread? To shorten baking time, bake in muffin tins?

      That's a good idea! I was thinking that I might try defrosting and then drying the strawberries before I add them next time but frozen strawberries can be sooo mushy! It did taste wonderful so maybe muffins would be the solution! Thanks for the thoughts Colinka :D

      I think it tastes like starfruit if you’ve ever had that but I’ve seen it described as a mix of pineapple, strawberry and green grapes sweet and a bit like a tropical taste...hard to describe lol

    I’m posting this is a separate comment hoping that this wonderful community can help me. At the grocery store I accidentally grabbed a package of brown sticky rice thinking I was grabbing the normal sticky rice that I was going to use to make sushi bowls. A quick Google search tells me that brown rice or brown sticky rice does not work well for sushi. Can anyone tell me (A) how do I cook it and (B) what do I want to make with it? Oh I have both an instant pot and a rice cooker so I could use either for cooking the rice up. Thanks!

      I love brown rice in sushi myself. I'd give it a tryvanyway, especially as it's just for sushi bowls.

    You cannot use frozen food\fruit in baking. You must thaw and drain.

      Interesting! Maybe it depends on the recipe? I use frozen blueberries and cranberries in muffins all the time but they aren’t very watery 🤔 That was probably the problem here though! 👍🏼

      I either can it in chunks in my pressure canner, freeze it in chunks or puree it and freeze it :)

    I think you should have diced the strawberries and left out to thaw, then drained them, before putting them in the bread mixture. Have you ever tried just making a pumpkin soup as usual, then take your cooked noodles and fry them and use as croutons on top of your soup. They also go great with oriental dishes too.

      I've never heard or even imagine frying noodles - but why not? That sounds good as I love the crispy parts of fried potatoes the best.

      I've heard you can air fry your noodles too but havent tried it...

    Quick bread....add foil to the top next time. And yes, if using frozen items in the recipe, it's going to need 2hrs to bake. Your bread probably needed more time. Also, your recipe had a lot of liquids in it that aren't necessarily needed. The bananas AND an egg AND milk AND oil. Makes the bread moist, but again, takes longer to bake.
    Frozen bananas are the most unfortunate looking things, yes? 🤮

    For the poblano peppers:
    -Rajas con crema: basically a spicy white cheese sauce you can add to tacos or nachos.
    That's super basic though. 😁
    How about stuffed peppers egg rolls? Stuff them with cream cheese. 🤔😄😉
