Satay Chicken Skewers with Peanut Sauce - Thai Cuisine - Kumiko Recipe

This is a dish I ate at a market in Thailand, in the North East on the border with Laos.
It's a chicken skewer recipe but I wanted to introduce you to the peanut sauce instead.
*For a little less than 30 skewers
- 300g chicken fillet
- 1 tbsp curry powder
- 2 tsp soy sauce and
- 15cm skewers
*For the sauce
- 50g unsalted peanuts
- 1 garlic
- red pepper
- 1 tbsp Nuoc-Mam fish sauce
- 2 tsp sugar
- 5g fried onion
- 1 tsp coconut oil or sunflower oil
- 100ml coconut milk
