Super quick tips: i noticed that you used whole shrimps but not the shells - definitely try dry-frying shrimp shells until your pot is coated with caramelized shrimp tamale goodness, THEN add water to boil.. this gives you an extra boost of umami shrimp flavour (fish out the shrimp shells before you dump the rest of the ingredients in). Also, the longer fish sauce is cooked the more it loses its umami so I would add that in after the stove is turned off or 30s before :D

I love bitter melon with eggs! I make mine a little different. I sauté some tomatoes, onion, and garlic first with a little bit of fish sauce. Then I add in the bitter melon to cook through then the eggs. So good!
Love the bittermelon and eggs. One trick I learned is to put in some scallion along with the bitter melon to let it slightly burnt before pouring the egg mixture in. It makes a big difference. :)
Wow these are all things I would totally eat too!! I’ve been eating like this since I was a kid. Makes me realize how much influence my mom (we are Filipino) has from Chinese cooking in her dishes. I loooove opo with shrimp & tomatoes as well as bitter melon with eggs 😍
Instead of cooking it separately, I usually marinate the shrimp first with fish sauce sugar pepper garlic and some mushroom seasoning. I cook it in the pot then add water then the squash. Salt as needed. Allllll the flavors come outtttt. Much easier as a one pot recipe!
If u massage the sliced bitter melon with like 1/2 tsp salt, leave it for a few mins and repeat 1-3 times then rinse the salt off, it helps taste less bitter for those who can’t stand the bitterness.
Ahh classic soup and bitter melon stir fry! I usually add cilantro, green onions, and some black pepper into the soup at the end for more flavoring!! For the bitter melon try adding garlic and some glass noodles while stir frying the bitter melon, then eggs! It’ll be a game changer!

YES BITTERMELON! I know a lot of us Asians hated it growing up, but I actually started liking it. My mom made it with black bean sauce and ground pork. It would soak up the pork fat and black bean paste so it was more fragrant. And the leftovers would taste better since it sits in the sauce for longer.
FYI, bitter melon is VERY good for you. It has a wonderful effect on your blood sugar. I’d consider it a super food. It’s eaten in traditional Okinawan fare, and has been attributed to their longevity. You can buy it dried in a tea form, but you also can cook with it as Weylie did here.

I actually cooked some steamed fish after seeing her made it in her previous video! At first, I used fish fillet, then after realizing it's actually quite simple I braved myself to cook a whole fish the next time and it worked! It actually tasted so good! Mmm! I love that squash soup! I'm not sure if it's the Chinese way or just my dad's spin on it but, it's made with more of a light chicken broth instead of fish sauce. Both really tasty either way! Bitter melon is also super tasty with salted egg yolk! A slightly more elevated version :) I remember forcing myself to eat bitter melon when I was younger so I could get used to it also, ate it dipping it in sugar. Thank you for sharing Weylie! ooh love this video 🧡 as someone who has experimented with many kimchi dishes, my tip would be to add a bit of gochujang (if not avail, some sugar or honey) to it - it helps the kimchi and garlic flavors “stick” to the noodles and to just bring out the kimchi flavor a bit! much love!

Heh-heh. - That is my favorite type of Ramen. - I usually don't cook with kimchi, because I'm not Korean, and store-bought kimchi or the one that you get at Bibibop tastes awful. Though, I do like the one from the Korean restaurant for some reason. - For a sunny side up egg, I would put a lid over the pan in order to steam the top of the egg. I don't like my eggs too runny. - I love seaweeds!!! - I can't stand the flavor of bitter melons. They really taste bitter! The only reason why I have them regularly in the house is that Dad loves them, and Mom cooks bitter melons for him. - Yea, finally an Asian TH-camr that makes Asian meals! When I search "Korean food" or "Japanese food" or even "Vietnamese food" on TH-cam, I get vegetable-heavy, home-made dishes. But when I search for "Chinese food", I just get food from American Chinese restaurants, and those foods are super-oily (because of the amount of deep frying), super-sugary (for flavor), super-salty (again, for flavor) and a ton of MSG. There are a ton of natural glutamates in foods; I don't need to add pure MSG.

Bitter melon is my FAVORITE childhood veggie. Loved it boiled, stir fried, raw, etc. so glad to see another way for me to use this! 😍💜

If you scrub salt on the bittermelon then rise it out with water it’ll cut some of the bitterness!
