Thanks! The challenge is keeping a whole week to under an hour. There's another like 90 minutes of interview with Brandon that we'll have to figure out how to share... 🤔

Thank you for these long videos. In-depth cookbook reviews with a decent quality are scarce.

I really like how yall explain flavors in terms of the base: acids, fat as well as the textures involved it gives me a better idea of how that would go with my palette preferences. I absolutely love this series

Two of my favorite food content creators!!! As usual, very helpful, in-depth review. The awesome collaboration and casual interview/interaction at the end is just…*chef’s kiss*!
How are you all doing?? :)

I’ve looked through this cookbook - it’s advanced. Each prep was like a days work! So many steps and sub recipes. I love the menus you put together using duck two ways, pistachio three ways.

They def had time constraints, but a lot of them were very hands off process-wise (e.g. stocks, reductions, brines, confits, ferments)

Further along in video…maybe you could’ve used a fish grilling basket for the branzino. I used to see them in Japanese hardware stores…always sort of wanted one….

I watch a fair amount of this series, this is the first time I immediately bought one of the books. Great video

What a thoughtful final review. Won’t be adding this one to the wishlist but I think that just speaks to how well the book/your review outlines its preferred audience and level of effort

I’ve learned so much from following SadPapi for a while. Haven’t had a moment to try anything out of the book yet, but I did read through it and can already tell so many of his flavors adapt well and can contrast throughout the book, as well as his videos. I’ve followed y’all on TikTok for a little now, just found your TH-cam and love these long vids and reviews!

These videos are great! I love watching them and find the long form cooking very comforting as well as informative. I was wondering- would you ever consider not including the background music? Just some feedback from someone who has watched all of your cookbook reviews. I'll keep watching regardless haha 🙂

Yay! I always watch your TikTok’s and am loving the long format videos too. Brandon is another one of my favorites, so I was excited to see the first day on tiktok. I love the idea of having the cookbook author join you when possible! Maybe you can try the Mythical Kitchen cookbook and have Mythical Josh join you.

I always wondered about why sometimes cookbooks use measurements that just don't make sense.
I rnever imagined that the actual writer would have so little of an input, frankly.
Maybe big names who have cultivated a rapport with a publishing house may have it easier after a while and may be able to participate more in the process.

Love these long form cookbook vids. Would love you guys to check out My America by Kwame Onwuachi, I’ve made a few and highly recommend it. Really great recipes, but a lot of work with dependencies.

We've had the book for a while but we haven't dug into American cuisines much recently. We'll take a look and see if we can make it work!
