You must manage your Yatai organization with classification, 1. Traditional/Authentic, 2. Fusion.
Consumer will enjoy taking experience of 1-2 alternately.
You can have a Directory list of Yatai to promote their location and type of dishes.
No one eats the same food everyday, with lots of consumers. Yatai will not die.

ホント屋台文化って良いですよね (*'▽') お店が独自のメニュー考えて出してくれるの凄く嬉しいですよね。意外とですが生の食材がNGと言う処ですね。きちんと火が通った料理って安心して食べられます。当方は都内在住なのですが焼き鳥屋で頼んだレバーとかモツにやられた経験あるので出されたものを安心して食べれるのってホント嬉しいです。

Strange. If they are working, they cant be on student visa. Otherwise, nice to see youg people take some burden from the owner.
They can! If allowed by the school and immigration is informed, foreign students are allowed to work a limited amount of hours per week! It's no wonder these carts are being phased out... they use ancient technology and methods, look filthy are are eye sores.
If it was up to me it would design the cart so that it could deploy in minutes, easy to maneuver, made out of stainless steel or something that can be easily cleaned easily, and can be handled by a single person
