Oh my. This noodle is no joke! My mom cooked this dish really well. She did not want to eat this food anywhere else until she found 444. I was lucky enough to have it several times during my stay in Saigon recently.

Her description of the Mekong style and Saigon style is on point. I like Mekong style mắm kho(hot pot style), also just braised and with eggplants. Saigonese style is more clear broth and yes less stinky in the effervescence of the fermented fish and less salty. I like them both especially with good accompaniments. Yummy! Yes Max, I think it’s the next noodle dish aside from pho and bun Bo Hue.😋😋

It's true that the cuisine in the South of Vietnam is much more diverse than it is in the North. I have been to Sai Gon twice and I always ate Bún Mắm when I was there. It was an amazing kind of noodles I have never seen and tried in the North.

I think it has a ways to go before it hits pho or bun bo Hue level of popularity, especially with Westerners. I'd say bun rieu is up there with bun bo Hue. Bun ca cay looks amazing as well as banh canh (cua).

Omg you found my secret spot. 😂 I "discovered this spot while riding aimlessly on a motorbike with my friend. As soon as I saw the amount of motorbikes parked at the front, I just knew that we got to stop and try out this place. It was the best bún mắm I've ever had.

Hi, I had Bun Moc, Bun Song but I have never heard about Bun Sua yet. And I have never had Bun Mam as well. But I'll try it when I visit Vietnam in December. I've been living in the States for a long long time and am not that adventurous like Max. I hardly eat "mam Tom" "mam Ruoc" and "mam nem". I had always tried alll kind of different dishes while I visit Vietnam. I

Bún mắm là đặc sản miền tây gồm cá thịt tôm mực heo quay.. có gì nấu nấy, rau củ nấu cùng : khổ qua, cà tím đậu... ăn cùng rất nhiều loại rau..
