My boss and I went to eat at an Italian restaurant. That was my first taste of Aglio e Olio. Best thing I had ever eaten. We were in the area for a week. I ate there every night. Since then (1984) I've been trying to replicate that recipe. I still eat it every week or so.

Try spaghetti carbonara for mama. Basically it is bacon and egg spaghetti. Very flavorful, high in protein (and calories) easy and delicious, no tomatoes.
My Baltimore side of the family is very German and eat spaghetti in lots of butter! Probably sacrilege to Italians, but it's a rich and comforting food to me decades later. Put the cold pats of butter in just drained pasta, stir around, add Parmesan and some of the pasta water and stir like mad if you want to be fancy, or just top with the cheese. Delish.
3rd generation Italian American from San Francisco: this dish is one our very favorites!! We call it 'A little bit of Something!' We use a mild pepper, anchovies , capers , chopped parsley, chopped garlic in 1/2 cube Butter with Olive oil. Dissolved in hot pan .. add the thin spaghetti and top with a bit of bread crumbs!! Motto Bene!!!
I made this and it was great. Simple with a distinct flavor. My roommates did not enjoy it, though. Anchovy lovers are rather rare outside of Italy. But I love the flavor and its actually not too overpowering in this dish. I could have left more oil from the anchovies and been fine.
people are afraid of anchovies for some reason. it's sad, because they are so good in pasta and salads, pizza, so many things. oh well. they don't know what they're missing
Hey Chef Pasquale! I made this last night for dinner. Delicioso! Great flavors that come together nicely. I added a bit of lemon juice to help cut the oil a little bit. Also, I fried crushed red pepper flakes with the anchovies, garlic, and capers to give it some heat. Awesome recipe! Thanks for sharing! Salute!
