  • It is one of the symbolic dishes of the Amalfi Coast, but also a quick and easy pasta recipe to make at home.     You have to love the openness and confidence of the top chefs in Italy on this Channel that shows you EXACTLY how to make their signature dishes, knowing that you will never be able to source the simple indigenous ingredients as good as theirs, which will make the difference. Unlike many other chefs who guard their recipes as if it were Classic Coke.

      Quality food and pasta in particular is so omnipresent in italy that it makes little sense to keep secrets. They know that very few go to these lengths of perfection so it is rather a chance to demonstrate how much thought and passion actually goes into each dish. I am sure if you showed up and told them that you sourced everything and made it exactly like they do, they would pour you a glass of wine on the house and treat you like a friend of the family.

      Italian here, but remove the "beautiful people". Ignorance here is so high that the country is stuck with little to zero progress cause people always want more and more to the point we get nothing.

    You can see from the video already that the first pasta dish is very cream and juicy most, yet it does not seem heavy or fatty and oily at all. As they mixed it in a big stainless steel bowl with a certain heat and water content without it vaporising or heating to much, you can reach perfect consistency. Because when it is too creamy and fatty it will be very heavy and not as pleasant to eat. Very amazing dishes, thank you so much!

    Thanks to both Chefs Mellino! Details make so much difference. The two variations in method are helpful. Also, the careful explanation of which pasta to use, and the contribution of the two cheeses.
    I must plant extra zucchini in the garden this year so I can make these Nerano dishes many times.

    This is just extraordinary. During the preparation of the traditional recipe, I was thinking of the cheeses I could get in the US to substitute for the local provolone. Then, the son comes on to show how he has adapted the recipe for the restaurant using two different ages of parmigiano (both of which you can order in the US). The idea of letting the zucchini dry overnight to lose some of its moisture before frying is very smart. Now I need to grow my own zucchini blossoms--because that seems essential to the modern update! Grazie!!

    Sono stata lì 3 volte, tra il 2004-2009. E' un posto fantastico con una cucina meravigliosa. Quando ho mangiato le verdura (erano zucchine e peperoni fatti al vapore dentro una specie di tasca) mi sono detta: Cavolo! Mi ero dimenticata come fosse davvero il sapore della verdura, anche se le mangio a casa ogni settimana, finché non le ho mangiate lì. Questo per dire solo le verdura e il livello di qualità del prodotto (di casa per altro) e della cucina. L'ambiente è molto caldo e confortevole. Non sembra di stare sulle spine, per un ristorante che ha 2 stelle Michelin per dire. E' un ambiente molto rilassato e amichevole. Non so rendo l'idea.
    Però, la cosa che mi ha colpito di più sono stati i proprietari, Antonio e la moglie Rita. Sono venuti al nostro tavolo a scambiare due chiacchere (lo facevano con tutti) e quando ho chiesto se alla fine del pranzo - tra l'altro durato 5 ore, non volevamo andare via lol - potevo comprare da loro una bottiglia di limoncello, perché era troppo buono, non solo hanno detto si, ma mi hanno fatto pure una bella sorpresa. Non solo non mi hanno lasciato pagare il limoncello, ma mi hanno regalato anche una grande bottiglia di Olio d'Oliva loro. Sono persone davvero squisite e umili. Una volta nella vita ci dovete andare, e se potete starci pure per un weekend perché hanno anche delle stanze e il posto è semplicemente una favola.

    Salve , ovviamente super complimenti a tutta la brigata di Quattro passi.
    Un posto incantevole dove la Famiglia Mellino ha saputo regalare agli ospiti la magia del territorio e con Fabrizio anche una nota di contemporaneità.
    Conosco quattro passi da ragazzino e oggi posso confermare che è sempre bello mangiare nel Vs. Splendido ristorante.
    Detto questo ho una piccolissima nota da fare...
    Nerano non si trova nella costiera Amalfitana ma nella penisola sorrentina. Ovviamente la costiera Amalfitana e la penisola Sorrentina sono sorelle e figlie di un ' incantevole posto che tutti apprezziamo.
    Ma volevo solo fare questo piccolo appunto.anche perché alla fine del video c'è un'immagine che è la penisola sorrentina dove si vede benissimo il comune di Massa Lubrense dove Nerano e Marina del cantone ne fanno parte.

    Da appassionato di cucina, un dubbio mi attanaglia riguardo a questo fantastico piatto... Perché friggere per poi ammorbidire unendo alla cremina?..non sarebbe meglio,mettere le zucchine fritte solo alla fine nell' impiattamento? Ottenendo così anche il croccante?

    Non conoscevo le Nerano, nonostante non sia propriamente di Bergamo 😁 ho provato a prepararla con un po’ di scetticismo e invece è venuto fuori in capolavoro di bontà, come spesso accade con i piatti della tradizione.
    Le due versioni non sono molto differenti, giusto qualche accortezza derivante dalle maggiori conoscenze tecniche di oggi.

    This is great and I will try it. But why butter? Would pasta water + lots of cheese not be enough?

      Not necessary if you don't want it. It's just more in line with tradition, olive oil was very expensive back then so a lot of "real" traditional Italian dishes included animal fat or butter which were more easily available for the lower class. Most of the Italian dishes that are "olive oil" based are not with olive oil in the most authentic version, it was just changed throughout the years once this ingredient became more accessibile (and to make dishes lighter as cousine has generally become lighter).
      Putting aside the boring historical description, in order to get a very creamy sauce you need a fat source, so if you don't use butter you'll need extravirgin olive oil which however has a stronger taste (a good taste but can sometimes become overpowering). If you don't to the mantecatura without some extra fat source at the end of the cooking process you'll still get a good dish but not as creamy as in the video.

    Notevole! La faccio già in modo simile alla versione classica ma ho rubato un paio di trucchi interessanti... peccato che il provolone del monaco a Roma costa parecchio

    Ha raccontato la storia della pasta con zucchine alla Nerano ma non il nome della trattoria dov’è stata preparata la prima volta. Credo sia la trattoria Mariagrazia. Diamo a Cesare quello che è di Cesare.

    Dopo aver visto quanto costa il provolone del monaco (45 euro al kg. in un supermercato discount), posso solo dire si può andare a mangiare gli spaghetti alla Nerano solo in un ristorante stellato, visto è diventato un piatto veramente di lusso!
