Thank you! So, often in Pakistani vegetable curries, we don’t brown and break down the onion like in normal masalas. It tastes different to the usual masala and it’s nice! Bulks up the curry and adds a bit more interesting to something that many would see as a boring veggie lol. Not browning it also makes it quicker, coz nice even browning can take 10-15 mins 😬
