Crispy Smashed Potatoes
Potatoes and Seasoning
1.5kg (3.3lbs) - Baby or New Potatoes
2 Tbsp (40ml) - Extra Virgin Olive Oil
1 tsp (3g) - Onion Powder
1 tsp (3g) - Garlic Powder
1 tsp (3g) - Smoked Paprika
1/4 tsp (0.2g) - Mustard Powder
1/2 tsp (1.5g) - Ground Fennel
Salt & Pepper To Taste
Flat leaf Parsley, Garnish
Basic Mayonnaise -
1 - Whole Egg
3 tsp (15ml) - White Vinegar
1 tsp (10g) - Dijon Mustard
180ml (150g) - Vegetable Oil
Honey Mustard Add Ins -
1 Tbsp (20g) - Dijon Mustard
1 Tbsp (20g) - Wholegrain or American Mustard
2 1/2 Tbsp (50g) - Honey
1 tsp (3g) - Garlic Powder
1 tsp (3g) - Sweet Paprika
Salt & Pepper To Taste
Method -
Preheat oven to 180.c - 350.f. Line a baking sheet with parchment paper
If your potatoes are large, slice them in half. If not, leave them whole. Place the potatoes into a pot of salted cold water and bring to a boil. Cook for 20 minutes or until fork tender but not falling apart. Drain the potatoes and allow them to dry.
Place the potatoes onto a large baking tray lined with parchment paper. Use the bottom of a glass or flat surface to push and smash the potatoes.
Mix all the spice ingredients in a bowl and sprinkle over each potato. Check seasoning.
Bake the smashed potatoes in the oven for 40-50 minutes or until golden and extremely crispy. Flip the potatoes in the last 20 minutes.
Add all the base mayonnaise ingredients to a tall jar or container to make the mayonnaise. Blend with an immersion blender until a thick emulsion has been created (mayonnaise). Add in the remaining ingredients and blend again. Check seasoning and store in the fridge until ready to serve.
Serve the crispy potatoes with the honey mustard mayonnaise and garnish with flat-leaf parsley. Dig in.

Great question! The reason I do that is to stabilise the basic mayonnaise first. Once that’s established and thick I’ll then adjust it with the other ingredients. You could add all the ingredients together at once but you have a higher chance of the emulsion breaking

Looks good, but you've spent about 1.5 hours to cook potatoes. I need a second life for such recipes! :)
Does take a bit of time but you can put them on and do other things while they’re cooking
I cooked extra in the week, leaving me a few for today. Didn't have fennel and used an air fryer so needed to reduce timing. Came out just right, so will be a regular in my weekly menu.
Time management is key brother
You don't need to sit by the oven the whole time.

I do a version of this a couple at a time. Microwave the potato until soft. Put it in a frying pan with some fat on medium heat. Sprinkle on some salt and onion powder. A dab of butter adds flavor as well. Fry till crisp

Chef Jack, I am currently in the process of making this dish, and my only hope is that mine come out looking as good as yours. Also, I was having issues with the potatoes sticking to the bottom of the glass that I used to smash them. I added oil as you suggested, and then added more when it didn't work as well as I thought it should, then I figured out if I twist the glass slightly as I am trying to remove it, the potato won't stick to it as much.
I've got another 20 or 25 minutes before these are ready, and I can't wait...
I was told when you smash them down really thin like that and make them really crispy, they become Keto Friendly?

Although tasty. I cooked this to just as the video, and cooked them almost 65 minutes and not crunchy. Maybe not enough oil. I’ll try again.
This will depend on your oven and how much you smashed the potatoes. All ovens are different and although it says it’s at the temp it is, it very well may not be. A big factor is how thin you make the potatoes. Too thick and they’ll take forever to crisp up

Yes the parsley is a garnish so you don’t have to use it
Top tip. Use dripping or lard.
Cook bacon on a rack and use the drippings for the taters.

The video states to bake 40-50 minutes, then flip and cook an additional 10-15 minutes. The typed recipe states this? "Bake the smashed potatoes in the oven for 40-50 minutes or until golden and extremely crispy. Flip the potatoes in the last 20 minutes". This would mean bake for 30 minutes, then flip and bake for 20 minutes. Which one is best?
