    Chiffonade is a slicing technique in which leafy green vegetables such as spinach, sorrel, or Swiss chard, or a flat-leaved herb like basil, are cut into long, thin strips. This is accomplished by stacking leaves, rolling them tightly, then slicing the leaves perpendicular to the roll.The technique can also be applied to thin crepes or omelets to produce strips.

      It's not mandatory if you don't have green chopping board because in our college as well all the work is done on white chopping board only😂

    Although its hard to hear at times, this is a great tutorial
    I attempted to study an introductory cooking course in my country and we went over Brunoise, Macedoine, Chiffonade and Paysanne cuts initially and i was pretty lost. There was no reinforcement of the learning like there is here. The demonstration is easy to see and its done slowly enough so that it can be analyzed by the students but still showcase a degree of speed. They never showed any hand techniques prior to actually attempting the cuts nor how to hold a knife or anything.
    The only thing that carries over from that course and this video is the onion cutting which was described to us as Brunoise/Macedoine with 3/1 horizontal cuts respectively.
    Its nice how you also show the student what the item being sliced is like rather than the result for a visual reference.
    Safe to say I did not feel confident out the gate with my country's course and i would be underprepared for the following steps and very very quick workplace experience in a few weeks.
    If only all teachers were like this one

    when you cut onions, you have to leave the root part attached, it holds all the leaves together, otherwise they will start sliding out during chopping and also you don't have to make horizontal cuts. they are absolutely not necessary and it's easy to cut yourself.

    Macedoine of vegetables-- the first step is to peel and wash the vegetable. If possible, regularize its shape into a rectangle or square by topping and tailing it and squaring off the sides. Then cut it into long pieces, then cut each of those pieces into 4 mm (1/6th inch) thick slices.

      Dhruba Paudel it was just for display if you have given attention in the beginning. Also hand washing should be the first step in cooking, but how many people include it in their videos. Few things are omitted so that you could focus on the content :)

    1. Chopping board looks stained.
    2. An organised and clean chef will have a trash bowl in which to peel the carrots... Not just move them aside on a table.

    Jardiniere or other name for the same is Baton ,in this we cut the vegetable in measurement of approx 3mm×3mm×18mm
    it resemble the same shape as of french fries
