Well, it was over 50 years ago and I was a pizza cook at a local Italian restaurant. Papa Mazzi told me the secret to good Italian/Sicilian cooking was pork. You got to have pork in it! Well, I always do that with my meat loaf and any Italian style dish that has meat in it! I always used oatmeal for my binder. No gluten in it, but it did work.

Man... that looks good, I'm drooling like mad! It made me think of my Grandmother's meatloaf. She had her "secret" ingredients, for the binder, instead of bread crumbs or crackers, she used ground up BBQ potato chips, eggs and buttermilk for the moisture. I've never been able to replicate it, because there's one ingredient I'm missing... Grandma, R.I.P.
Not pretending to be a cook but read a recipe years ago supposedly used for the "Rockefellers". Difference between most is they used half a tub of cottage cheese and half a tub of sour cream. Burger and sausage although I use the hot country sausage. Oh, and dark rye bread. Onion soup mix. pinches of rosemary, nutmeg and curry. Extremely flavorful and juicy! Makes great sammiches on the rest of the dark rye bread ya had to buy for binding. I like your recipe as well and might try without the smoking. Thanks Mr Rollins.

I make something similar to this, but all beef, no peppers, individual loaves wrapped in bacon. I have found that the cheese snack sticks, cut in half crossways are the perfect size. I use a sharp cheddar in mine and they are yummy!
Looks fabulous. A bit too much bread for my taste, but the cheese looked wonderful. Can’t do jalapeños anymore. We don’t get along. I know you cut the end to show the camera, but I’d make sure it was sealed so no cheese was wasted. The glaze worked well. Pork sausage meat is essential for tasty meatloaf. Thanks for posting.

Had meatloaf 2 nights ago... good family meal for sure! Try adding some potato starch, great binder so it doesn't fall apart, and it helps hold the juice.

I just made a meatloaf sandwich for my husband this morning! Lol The thing I find hard about meatloaf is you can't taste it for seasoning as you are throwing it all together! I doubt it is ever the same! Lol But I use salsa, brown sugar, tomato sauce and small diced can of tomatoes, a touch of apple cider vinegar and make a reduction bbq sauce. That goes on top! But I will have to try this one! Looks so yummy!❤
I have made something very akin to this. But I use a well greased bread pan. Keeps the cheese at the end from melting out and dripping away. That and if I don't finish it in one sitting the leftovers can sit in the bread pan in the fridge.

I love meatloaf. Especially my recipe that I cook in the MICROWAVE. Yes, you heard it right, the microwave. I have done it in the oven and the end result is exactly the same. Means I can have dinner in 20 minutes after working overtime, instead of an hour or so. That said, that meatloaf looked superb and I'll definitely be giving this a go.
I believe you…years ago when I had to… I figured out that with the right adjustments you can cook dang near anything in one. Ain’t no substituting that smoke tho.

One easy enhancement. Put strips of raw bacon overtop the meatloaf right before it goes on the heat. Let em cook until crispy. Fantastic.

Adding another comment.. my mom would use cornflakes. My wife makes it with frosted flakes. I typically make it with oatmeal.

I say this every time I see a meatloaf recipe, when I make meatloaf I use oatmeal instead of bread crumbs, it creates a superior texture to bread.
My mother used them as well, I have use this method,, bread crumbs, ritz crackers and saltiines

instead of all that bread, I uses shredded dried pork it comes in many flavors instead to keep it more keto friendly
My husband has to go meat and veggies only. No starch. I'm going to cram it with mushrooms. 😁

My granny sometimes used rolled oats instead of bread crumbs or cracker meal.
I do to. I've used rolled oats for close to twenty years in meatloaf.
