    1:3 water : sugar
    (E.g. 100g water, 300g sugar)
    To make enough for one cake I recommend making several of the above measurements.
    Extra tall 6" sponge cake:

    I haven't made sugar crystals in decades, but one thing I remember clearly is that after you have made your strong sugar syrup and poured it into the tall jar, place it in a spot where it will not be moved! Not at all. Then add the stick or string with some table sugar on it and gently place it in the jar. Do not move this jar or the stick/string. That way the crystals will grow large AND clear. Moving even a little bit disrupts this process and although you may grow crystals, they will not be so clear and well formed.

    Thank you for all your lovely tutorials! Here's what worked for me when I wanted to make a lot of rock candy: I made a huge batch of the sugar syrup and poured it into a square polycarbonate food storage container (mine is from WebstaurantStore but it's just a heat-resistant restaurant-grade food container) after it had cooled slightly. The crystals grew up the sides and across the bottom. I was able to wiggle/move the plastic enough to get the crystals off the plastic. The bottom was a little tricky to get out because it grew in a solid sheet and all the chunks needed to be broken up, but it felt worth it to me because of how many more crystals I got from a batch using the stick method.

      Jennifer, thank you for sharing your rock candy technique. I have never had much success with the stick rock candy method, even though I remember my class successfully making stick rock candy in first or second grade. Of course we basically just watched the teacher make it, and that was what was considered appropriate instruction for young children all those years ago. Boring!

    The cake is really lovely, and the teaching tape make the creation of the cake so accessible. My only concern is making the rock crystals. Many years I made a project out of making rock candy with toddlers, only we had a real problem getting crystals to form. I finally bought rock candy on a stick, and sneaky replaced the failed candy with the beautiful professional rock candy. The children, being young and innocent, were thrilled and delighted with the “magical” transformation. But if I have to resort to buying commercial rock candy, this will be one expensive cake! But the gratification of creating something so beautiful, so it will be worth

    Another thing you can do with the crystals is colour your solution(s) your gradiation. Then it saves you the step. I might use everclear instead of vodka, just because it's higher in alcohol and will dry faster

    Can I paint gold lines all around the cake as well as you did around the crystals with gold paint? Since is buttercream I am not sure if the gold paint or the buttercream are going to get damage?

    Amazing tutorial! Cake looks incredible! Very talented. You’ve inspired me to learn how to make / try making cakes in your style.... I’m still trying to perfect the Swiss meringue buttercream though! How important is adding all of the butter - this always seems so much butter and I can’t seem to get your consistency? The meringue element always works ok though - except for one hot kitchen aid machine!

      Try making ermine frosting instead (boiled flour buttercream). I think its easier to nake, doesbt have eggs and is less sweet and tastier.

      I would just use regular buttercream because I bake a lot and in my experience swis meringue buttercream tastes discusting and of butter

    Probably a silly question but how cold should the syrup be before you put the sugar coated skewers in. I want to make some for a cake I’m doing but want to practice first.

    You should try adding very little food coloring to you sugar syrup be for you add sugar skewer to it.

    Thank you for the tips on creating sugar crystals, I've also noticed they're not so readily available in the UK.
    As you said you used Swiss Meringue buttercream, I have to ask - am I missing something in terms of needing a strong stand mixer? I tried it for the first time the other day - twice - and I could not get the the eggs to stiff peaks. It looked more like melted marshmallow. I used eggs, not cartoned. They were at room temperature. I can't imagine how there was any grease on the equipment since it was a brand new mixer, plus I washed everything after the first failed attempt. I don't know what I did wrong 😭 I even mixed the first batch for a good half hour in case I was just being impatient. In. The. Bin.

      fluffy... For what it is worth, I would not attempt making Swiss Buttercream without the power of a good stand mixer backing me up.

      I know this comment is 3 month old, but I want to answer in case anybody is reading this later: It works, but i've experienced that the colours are not as intense as if you paint them. Hope this helps :)

    Do you store the stick with sugar on the fridge? I’m asking because I live in a tropical weather and ants come fast when they smell sugar even if you put a jar on a cabinet.

    I've been so nervous to try a geode cake because i dont want to use a cients order as a trial... what if it goes wrong?

      Oh lord no! Definitely don’t do that. Just an idea, you can cover a dummy cake and then just practice the geode part 🤷🏽‍♀️that way you cut down on costs and don’t waste cake

      Any cake I want to practice on I just do 4inch mini cake at the weekend and then we eat for pudding on Sunday 😊

      When we're practicing I think we have to accept there will be wastage unfortunately, but yes, definitely don't practice on a clients order!

    Should we cut the piece for the sugar crystals and place them while the cake is still chilled? I see after you place the crystals you also put back in the fridge as well... just want to make sure of this step!
