As always, you had me at "a good guzzle of german beer"! I watch this video this morning and got some emmenthaler and Weihnestphaner lager when I went shopping so I could make this. I watched your spaetzle video and made this. It was excellent! I will make it again! But I have two questions if you willl allow,. 1) what is that beer you are guzzling and 2) would it be appropriate to add bacon?
Forgive some of my spelling. Was that Ludwig II on your shirt in the spaetzle video? It looks like me when I was much younger.
With Weihenstephaner, you are on a pretty good track. It is in my top 3 of Helles. When shooting the video, i think it was Bayreuther Helles. My Favorite is Augustiner, though. It's got one very unique flavor that i cannot explain but love it the more.
Cooking always has something to do with creativity and finding out, what you like most. If it comes to bacon in Kässpätzle, i have never seen it served with bacon anywhere but then cheese, onions and bacon go pretty well together. Will it be true authentic Kässpätzle if you add bacon? Definitely not. Will it be yummy? Most probably yes.

When I was visiting pals in Munich, we drove about an hour or so to get on a cable car up to a restaurant and ordered spätzle. They were indeed delectable, all the while surrounded by a surreal looking mountain range. With the lighting the not so distant peaks looked a bit like papier mache. I wish I could recall the place.
I would guess it was the Zugspitze. That's not exactly an insider destination but it's the highest mountain in the german alps. When it's a clear view, i can see the Alps from my hometown and that's when i get Wanderlust ;-)
