Focaccia Pizza Crust Recipe

Ingredients:
100g active sourdough starter
30g extra virgin olive oil
400g filtered water
10g salt
500g bread flour
Mix liquid ingredients then add flour and mix.
Let dough rest 30 minutes and perform 4 rounds of stretch and folds over the next two hours.
Let dough rise 3 hours and then place in the fridge for 3 days.
Take dough out 1-2 hours before ready to use and let come to room temperature. Flour your surface well and lightly stretch dough out. Mine was basically rectangular, we don’t want to push down on the dough as you would a normal pizza crust.
The toppings added, and believe me, these are fire 🔥
Garlic Parmesan butter- this was a premade I found at the grocery store
Truffle oil
Chopped garlic
Fresh grated mozzarella- the prepackaged mozzarella that’s really thinly cut doesn’t work well for pizzas in my opinion.
Sautéed mushrooms I just used mini portobello
Cooked pancetta
Shallots
Pine nuts
Fresh basil
Top with hot peppers or jalapeños if you wanna make it spicy
Bake on a pizza stone in the oven 400° for about 20 to 25 minutes . I could’ve pulled a little sooner as my cheese got a little dark, but I like a crispy crust.
Top with Arugula or Micro Greens if you like!
