The Most Delicious Salmon Patties - My Grandma's Secret Ingredient

- Hey Luvs Hey 👋🏼 Welcome back to another themed Friday. We're making salmon patties and we're calling this one "Familiar Food Friday" so grab a drink, sit back and watch me make your mouth water #thisdivacancook2
*Ingredients:
2 Cans of Pink Salmon
1/2 Bell Pepper (diced)
1/2 Onion (diced)
2 Eggs
3 Tbsp. - 4 Tbsp. Yellow Cornmeal
*Seasonings: (These are just suggestions. Season to your own taste)
1 Tsp. Pink Himalayan Salt
1 1/2 Tsp. Black Pepper
2 Tsp. Garlic Powder
2 Tsp. Onion Powder
2 Tsp. Old Bay Seasoning
2 Chicken Boullion Cubes or Instant
*Directions:
1.) Drain and debone salmon. Flake salmon with a fork.
2.) Add all ingredients and seasonings to salmon and mix well.
3.) Form salmon into patties and transfer to a baking sheet.
4.) Preheat a pan with oil. When hot place patties in pan and brown on both sides.
5.) Transfer to a paper towel lined plate.
*Side dish suggestions:
White rice and Green Beans
White rice and Asparagus
Mashed Potatoes and Whole Kernel Corn
Mashed Potatoes and Broccoli

This is similar to my Grandma's recipe for salmon cakes, as we called them, that I grew up with in the '60s and '70s, except we did not put chicken bouillon in, we beat the eggs with a little milk using a fork before adding to the bowl, and the binder would vary depending on what was on hand, including crushed corn flakes, cracker meal, bread crumbs, flour, or corn meal.
Everything else was the same including all the seasonings and diced onions and green peppers. I can't imagine making them without the Old Bay Seasoning.
I almost forgot, my Grandma always fried them in Crisco with a little bacon grease added for flavor back in the day. And of course, she cooked the green beans with fat back.
My Grandma would make all sorts of meat patties using the same ingredients except with different meats replacing the salmon, including ground beef, ground pork, ground chicken, or ground turkey, and they all tasted great. (My Grandma bought the whole cuts of meat from the butcher, and ground up the lesser cuts or leftovers with her hand cranked meat grinder to make the patties. I'm too lazy for that, and I just buy the ground meats from the grocery store.)
I'll have to try adding the chicken bouillon next time I make salmon cakes.
Yes! I was raised on Salmon Patties, and I love them to this day.
My son (who is 30 now) loved them as a toddler and as an adult. I would leave my leftovers out on the stove and he would run into the house from playing outside , grab one and back out he'd go...chowing down. Wonderful recipe thank you.❤

Our Louisiana family have always used cornmeal [yellow and white, whichever was available and blended with a teaspoon of flour].

All my life I was taught to remove the bones too and the skin but a couple of years ago a visiting friend asked me to leave them in. I tried it and it was great. The bones are soft and good for you. Smash them between your fingers. That skin is omega 3 and melts away too. I keep it all in there now and love it. I also give the onions and peppers a quick sauté before adding to the mix, helps the vegetables to melt out their flavors too.

Right, cornmeal is nothing new. The bouillion is what was new to me.
I haven't had a good fried salmon patti since my granny passing. Fried potatoes & onion and salmon patti's was her signature dish. We always ate it for breakfast

Sounds like my mom and grandma's...always had fried potatoes and onions cooked in bacon grease, along with the salmon patties...and some fresh green beans from the garden with bacon. We sure did eat well back then compared with the "healthy" but bland food today. Lol. Grandma wouldn't let margarine in her house...she always had butter, lard, and bacon grease handy for anything she felt like cooking for us grandkids. Dad would drop us off at grandma's on his way to work...when we got there around 6:30 or 7 am, she already had biscuits or bread in the oven and was cutting up her rolled out noodles to dry for soup or pot pie for later. It was definitely a different time back then!!!

Heat them up in an air fryer will bring them back to life! I like them with buttery grits!😋
I have never made Salmon patties in my LIFE!!! IN MY 70'S.😢 I just dump the Salmon in a bowl, remove the bones, mash it up & heat in Micowave. And eat it with grits!! Sooo good!!! I'm going to try these this week. With no Fat Back, Bacon or salt. Going to add Mrs. Dash seasoning, onions yellow corn meal & bell peppers. I LOVE SALMON & GRITS!!! Thanks for telling us all hiw to make them.

My mom always used corn meal to make her salmon crochets, but white cornmeal they were delicious.
I leave the bones in. They are delicious.

Loved your recipe! My Mom used to put corn meal in hers as well. Ya know, the bell peppers made me think about making some and replacing the bell peppers with chopped up green onions and chives. I bet that would be really good.

This is the best recipe I've seen I bet these are incredibly delicious. I like the cornmeal it must add a little sweetness. The chicken bouillon was s surprise that must add a lot of flavor. The Old Bay is also a really good idea. Your salmon is beautiful I have to see if I can get some Bumble Bee salmon it's much nicer than the stuff in the red can with the gray salmon. I am so impressed.

The cornmeal sounds interesting. My mom used bread crumbs. Maybe cause we're northerners, but it doesn't matter, your salmon patties look sooooo good.

Yum...I use Italian bread crumbs, but I will definetly try corn meal...I use the green scallion like onions because for some reason I think the white onion makes everything taste sweet... I use those gloves too!

How interesting! I would say I stuck closer to your grandmother's original recipe. No bell pepper and only salt and pepper for seasoning. I use bread crumbs instead of corn meal. I never thought of using corn meal but may just have to give it a try. I completely agree that you just can't reheat salmon patties! Blessings to you and yours. Thanks for sharing!

Take your salmon to another level by using the fish flour/ cornmeal mix by Andy's or Louisiana fish fry if you want that extra flavor. Add the egg and finely chop some onion and roll them around into small salmon ball and fry up. They won't last no time!! You will be eating them before you get your sides ready😂

My mom used to make salmon patties, but she also made a salmon soup that was the best. When she made her salmon patties, she made it with fried potatoes with onions and green beans from the garden. Back then (1960's), she always had an old Crisco can on the stove with used bacon grease in it and that was what she used for her fried potatoes and salmon patties. The extra flavor from the bacon grease was wonderful! We don't cook like mom and grandma anymore (they always used butter, lard, bacon grease and other "unhealthy" but flavorful things!) We may live longer now, but i wonder often if we're enjoying our food as much as they did, and their lives!
I'm 63 and my parents were from MS... and yes I grew up on these with home made biscuits and gravy from the drippings from frying the salmon. Seriously nothing better. Uhm... just fyi for me and my family: The silver skin and the black looking skin we remove but we LOVE THE BONES!!! They are the best part for us. They for sure are delicious hot out of the grease (lard is our favorite thing to fry in). We too use the yellow cornmeal w/an egg for a binder. We also didn't add any bell pepper but sometimes jalapeno. We also loved them cold in sandwiches the next day with some Duke's mayo. Oh now I need to make some of these!
