    I have been traveling to Thailand for 20 years experiencing a lot of varieties of every dish, what amazes me is that you cook EVERYTHING the way that I like it. I am very often disappointed here in Sweden and also in Thailand of the food I am served but finally I can make it myself. Thank you sooooo much, this is the best cooking channel on TH-cam !

    Love the rawness of this video, authentic cooking from your home back kitchen..so different from the newest ones, where you look super sleek, the kitchen is immaculate and the post-production is very polished.

    I think you are a very good cook because you explain the difference in all the ingredients. I'm married to a Thai wife and you are 100% correct there are so many different flavors of the same thing...lol like soy sauce. I know exactly what your talking about and thought your video was very informative and easy to understand. Keep up the good videos!

    I have made fried rice all the time but never put fish sauce until after I watched this video. Wow, what a big difference in the flavor with just a small amount of fish sauce.

    Thank you for this recipe, I changed it a bit and did not add sugar, and added oyster sauce, 2 eggs minced garlic green onion and white pepper. My family enjoyed it

    Thailand is where I learned to eat rice again after eating some fried rice in Bangkok on my first tour there during the Vietnam War. Since then I have been eating it all the time and enjoy it so much.

    This recipe was great. I remember having amazing crab fried rice years ago and wanted to make it. This tasted exactly like what I remembered and was craving. Thanks so much for the great instructions and video. Can't believe how simple it is.

    Made this for dinner tonight, it is VERY tasty indeed ! I sprinkled mine with chilli flakes , lime juice and cilantro and it definitely adds that bit extra when you do this. Go easy with the Nam Pla Prik if you use that too - it has an extremely powerful taste that will overwhelm things if you put too much on.

    Just made this here at home. I couldn't find any crab so I substituted for shrimp and added cilantro. Mine still needs practice but still pretty tasty. Thanks Pai. I love your videos.

    I admitted being skeptical about this recipe at first because it's so simple. But once I made it it was a big hit. My daughter has been raving about it and kept asking me to make it again. Love the idea of lime wedge and spicy fish sauce, definitely bring the dish to a whole new level and show that condiments can't be overlooked. Thanks Pailin! Fried rice was one of my favorite when I was in Thailand. I hope you will plan on more videos.

    Thank you Pailin. I add minced pork, oyster sauce, fish sauce, dark and light soy sauce along with Thai chilli paste and herbs like basil leaves, kafir leaves and lemon grass finely chopped to give that aromatic flavour.

    Not usually for this dish, but we add it to some other kinds of fried rice like pineapple fried rice. But if you like it, you can add it, no problem!

    It's true everywhere I ate kao pad it was different. Even a big difference between Bangkok and the islands. I like it with soya sauce, some veg and eggs.

    Your version is different from local Thai cooking in term of timing, such as, they normally put crab meat last and only few flips after that to keep the crab meat intact. However, it looks yummy. Your presentation is clear and simple. Your appearance and voice make a different output to be a yummy fried rice in the end. Thanks.

    Dear Pailin. Thai egg fried rice sometimes is white or brownish depending on the soya sauce quantity. What is the colour preference for the authentic thai fried rice?

    Do you ever make it with tomato cooked in? The Thai restaurant we go to has big chunks of fried fresh tomato in the thai fried rice and I love it that way.

    MMM! I LOVE THIS Crab fried rice! Thanks for sharing! In Thailand, usually served with a kind of green sauce (sambal, tangy sweet spicy), do you have a recipe for that kind of condiment? :D I'm from Northern Malaysia, and frequent south Thailand, and LOVE THAI FOOD all my life! Now living in the USA, have to recreate food I love myself.

    No bean sprouts, Pailin-ja? I've had this wonderful, simple dish hundreds of times from Hatyai to Chiangrai and it always had bean sprouts.

    amazin thanks for sharing, one question do you use a heavy pan like a cast iron vs not using a wok or am I not seeing it right? does it matter?

      You can use a large, heavy saute pan like I do, or use a wok, it really doesn't matter what you use for this. As long as it's large enough and has good heat distribution.

      Fabulous I find cast iron too heavy cuz I like to toss the wok every once in a while. Carbon steel is easier to handle I think.

    Yes, I would use "usukuchi" pale soy sauce so as not to spoil the colour of light colour dishes. Flavour is also all natural, which is great. Nothing against "Healthy Boy Soy Sauce", but it contains MSG, so some people would be allergic to that.
