Made this tonight. Very possibly my favourite yet. Also got my son's seal of approval...."if I shut my eyes I would think this came from an Indian restaurant" he said. I made it for three and slightly adjusted quantities to suit.... used 9 cloves garlic, 6 ladles of base gravy, and 8 chillis. I also used Chicken Tikka. Overall though epic.

I'll have to buy some balti dishes now! Very informative and easy to follow for us budding amateurs. Like the bit of science in there too - even Louis-Camille Maillard got a mention. As a strange coincidence I actually made a garlic chilli chicken curry last night but I used your curry base sauce mk2. It was one of the best I've done with a greater richness in the sauce. I thought I had peaked after 25 years of making curries but no! The good news is I've still got over 4 litres of the base sauce in the freezer😁. Keep up the good work. If I was the queen I'd give you a knighthood.

Al, love your videos and the food you make. My wife is also a curry convert because of the fresh (not too fattening) ingredients you use. It would be brilliant if, when you list out the ingredients, you tell us how many meals it makes. Otherwise I need to guess how big the end product looks and so whether to calculate the ingredients up or down depending on how many meals I am planning to make.

Coming from Brum I understand exactly where you're coming from with the "balti" dish, however I'm preparing meals for 4 people and to cook 4 individual portions is not going to happen so I use a large pan. I also intend to add mushrooms and spinach making it a chicken and mushroom saag balti. I cooked your chicken bhuna by the way and my wife and I loved it. While making the base gravy and pre-cooking the chicken is time consuming it's well worth it as the flavours are excellent. The balti is next on the list with the jalfrezi in hot persuit. Thanks and keep up the good work. Get that book published.

Just a quick question I am going to try the garlic chicken balti and as I will be cooking for two, do I double up on the chicken, base gravy, spices, and everything else such as onions or peppers etc or do I just add a little more spice and not double up but double up on everything else. Thank you and keep up the good work.
