I made this twice for my family since this video came out and it was a big hit both times. They usually don't like BBQ foods but everyone loved this. Nice and easy on my Weber kettle and a Lodge cast iron pan. I used regular BBQ rub and Sweet Baby Ray's BBQ sauce. Thanks for the video!
I made this recipe last night as he said, with a few little differences. I seasoned the chicken breasts with Tajin, then put them in the oven at 325 for 45 minutes. Added bbq sauce and let them go for another 15 minutes. Then added the bacon and cheese and put them back in for five minutes. Topped off with green onions and then some black bean and corn salsa. I tried to copy with what was available to me at the time, and added something to it.
Malcom you never disappoint, I made this over the weekend. My wife and I loved it. Brought in a piece for my best friend and I quote, he said " This is a $30 piece of chicken!" I always look forward to your videos for weekend cooking or holiday cooking. Thank you sir.
My twist inspired by Malcom's great recipe. I substituted Enchilada sauce for BBQ sauce and pickled jalapeno's and sliced black olives for bacon. Topped with mexican cheese instead of colby jack and added green onions and cilantro as a toppings. Wow!

How long have you been waiting to pull the "winner winner chicken dinner line" out? :) One of the things I really love about these videos is that you're never pushy about selling your rubs and sauces. You basically say, "Here they are, use them if you want.", instead of making people feel like they have to use them. That really speaks to the confidence you have in your products.

I do something very similar except instead of bbq sauce I use hatch green chilies and and 505 green chile salsa.
