    Those look fire. And I'm a chef of 15 years. Started dabbling in Keto a year ago, went off for a long time, got back into a few months ago. Seeing fat loss and muscle growth. I'm totally gonna make these.

    I'm gonna have to try this without the crust; more like a pot-de-creme by making the custard on the stove top, chilling in a cup, and topping with whipped cream!! #cravingcustard !!

      I don't usually have much of an issue with that I have done chocolate that way for 20+ years some of which was in a restaurant. It is just a faster way to do it and get consistent size.

    • @FelineArtisan
      @FelineArtisan 6 ปีที่แล้ว +4

      Mellanie Hasimoto Heyo!
      Crust
      100 gr finely ground almond meal
      100 gr finely ground hazelnut meal
      1 tbsp psyllium husk powder
      1 tsp baking powder
      1 tbsp cream cheese (I use philadelphia, I am sure mascarpone will also do)
      1 tbsp sweetener of your choice (I use a mix of erythritol, xylitol and stevia, if you mix them they cancel each other's unpleasant aftertaste out)
      1 large egg
      75 grams melted unsalted butter
      1/2 tsp vanilla extract or powder

    • @FelineArtisan
      @FelineArtisan 6 ปีที่แล้ว +2

      Mellanie Hasimoto If your nut flours are not fine enough, put them in a food processor until they start looking a bit like nut butter.
      Mix the dry ingredients
      Melt the butter and pour it over the dry ingredients and mix with a fork
      Whip the egg in a bowl and pour over the mixture and mix well
      Add the cream cheese and mix until all combined (I used a fork, you can probably do this with a mixer as well)
      Your mix should resemble putty/play doh, you should be able to shape it with wet hands.

    • @FelineArtisan
      @FelineArtisan 6 ปีที่แล้ว +3

      Mellanie Hasimoto Place about 2/3 of the mix in your baking form (tart form would do best, I used a cake form with removable bottom and it was fine) and spread it out with your fingers to cover the entire bottom entirely and uniformly. Roll some of the mixture between your hands to make worm shapes, and place it around the form, flatten them out about 2 fingers tall and blend with the bottom of the pan.
      Preheat your oven at 180 C and stick the cake/tart pan in the freezer. By the time it freezes up your oven will be preheated.
      Put some baking paper over the dough, and add baking weights so it maintains its shape will it bakes (beans or rice will work).
      Bake for 20-25 minutes at 180 C.
      Remove from the oven once done and let it on the side to cool.

    Next time try baking them without the cookie sheet underneath. You will have golden crust if you bake them on the grid directly.
    Also, try adding a pinch of salt to the dough instead of erythritol.

I will say urs are always better but I don’t always have exact ingredients on hand so just supplement with what I got. My question is have you ever thought of using chia seeds for baking or breading? It’s got no carbs and but does have fat and protein. Thickens when wet. I feel like it might not b the most affordable but probably the healthiest option. Just my thoughts. Any ideas?
