Lemony Barley Soup | Healthy Mediterranean Diet Classic

- When the weather isn't ready to warm up and you are, this silky, filling lemony barley soup is just the trick. You can put this Mediterranean diet recipe together with healthy kitchen staples straight from the pantry and the fridge in about 30 minutes and be sure to make plenty because you're gonna want a second bowl. Tried it this evening… I was a little suspicious I have to admit. It was delicious and sunny… very welcome on a cold day. The bright flavor was wonderful with the heartiness of the barley. Thank you!

It’s a funny thing about this recipe, I think the barley, especially when not in a traditional “beef and barley” thing gives pause (it did me) but I felt the same way as you did. My husband loves barley and has the same childhood memories of good old Cambells. We never eat canned soups as I love making them and they're so much better without all of the unnecessary additives.

Not so much, as you probably remember if you visited any grocery stores. The past couple of years I've noticed the ramen noodle in a cup thing showing up on the shelves, but canned soup would be more of a curiosity than anything to the Spanish except for the occasional sighting of Fabada, the Asturian bean stew. And soup? I love making them too and I'm almost sorry soup season is giving way to salad season! XO Caroline
@@mediterraneanminutes I made this soup and it is lovely! I used chicken broth as that was what I had on hand and added 1 diced carrot. It will go in my recipe folder to be made on repeat. It was even better on day 2.
This soup was deliciious. I love lemon and barley so I knew it would be a hit. Even better on day 2. I added the spinach to the bowl on day 1 when serving instead of the pot as we were going to have leftovers.

I like barley in soups. I’d also add carrots, celery and potatoes to this recipe! Looks so good!
Great ideas and that’s what makes this soup so good… it can serve as a base for pretty much whatever you want to add… especially those things in the fridge whispering to you to use them up!

@@mediterraneanminutes we live in South Carolina and have been to all 47 state parks here and planning on doing all of NC! We have some beautiful places here very blessed!but I know it still can’t compare to Spain. I live for nature been trying to set up a week end close by on the lake but we have had rain every weekend and cold for the past month and calling for rain again this weekend!😩we have been having winter and summer back and forth.
Barley has such a lovely nutty texture. And is there anything else that screams Spring like a lemon 🍋. This reminds me of that Greek Lemon Chicken soup. I'm very tempted.
