  • The #1 reason it’s hard to stay on a new healthy way of eating like the Mediterranean diet is that it can be hard to maintain, especially if you don’t always have fresh ingredients in the fridge. But if you want to set yourself up for success with one trip to the grocery store, then this video is for you.
    I’m going to share a list of ingredients I call my Last-Minute Pantry. Groceries that cost around $50 to stock up on so you can stay on a healthy track and get nutrient-packed good-for-you meals on the table in less than 30 minutes.

    Hey guys, just for your information, I used prices that I found online from Walmart's grocery store to try to find prices that are valid in the US. And of course, the brands you see in my video are those I buy here in Spain! So please take the pricing with a big grain of salt!

    My life changed for the better once I started using parmesan cheese in a block, rather than using the stuff in a can. 😅 😅😅

      Hi Schnauzer! You’re totally welcome. The toughest part was whiddling it down to ingredients that could total up to $50 in one grocery trip and still provide a good balance. Of course, there are lots more that could be and should be part of that pantry, but for my ICE list (in case of emergency) at least this grocery list would do it!

    I get an A+ at this pantry-stocking too--I guess its because I'm always hangry and last minute as a full time worker with a fast metabolism. But I love your ideas for fast meals! Can't get enough!!!

    I love to make my oats savory with 1 or 2 eggs over medium and 1 Tab. Crunchy peanut butter or even instead of PB ill use salsa and hot sauce yumm 😋

    Thank you as always for your practical guides! I'm currently trying to use up my bursting freezer contents so that I can get to a more organized state. Spain makes jarred beans look so chic somehow also!

      Isn’t it funny what’s common in different places and what looks exotic in others? Canned goods in the US, jars here. Don’’t know why but I do know that Spain is renowned for the quality of their jarred and canned seafood, beans and vegetables so I count myself lucky that I can get them in a pretty much everyday way. I’ve got a similar freezer problem this week (not to mention my freezer is slightly larger than a shoebox). Too many apricots from the harvest and I’m not done jamming. Good luck with your tidy up! Not too far, all things considered, so you know probably better than most, what my experience has been, I am right in the city center of Alicante (overlooking Plaza del Elche) and the farm is in Torremanzanas, about 45 minutes up into the mountains. Aren’t we so lucky to live here!

I took Italian cuisine classes back home in Montreal Canada 🇨🇦 and now that I live full time here in Spain 🇪🇸, I’m also taking Spanish cooking classes in Alicante. It’s one of my favourite hobbies. If you are to give classes or plan to make any event concerning food, let me know 🤩. I would love to visit the farm 🙃

      Thanks! I have so many different types, one of my favorites are little jars I reuse from jars I end up with from buying kefir! But any that keep things nice and sealed tight work! And normally, they are always stored in a dark cupboard except for when it’s cooking time or photo time! The more the merrier! Cheers, Caroline

    Those prices don’t come close to what we pay in Michigan!

      Hi Leslie. Sorry about that, I’m a Michigan girl too. I sourced the prices from the online grocery store at Walmart since they are the largest US grocery chain and thought it would be roughly the same at places like Meijer and Kroger. I also used store brand labels and pulled the prices at the begining on July 2023. Hopefully you can find at least a few of the ingredients at comparable prices.     Hi Caroline. Great video. Do you keep your lemons in the fridge or out on the counter? I had my surgery last Thursday. How is your wrist doing?

      Hi Jennifer! First, lemons in the fridge but away from ethylene-producers like apples. Second, my wrist is a lot better but the location of the surgery aggravated the nerve that passes close by so it’s still something that is a bother from time to time and not much I can do about it but much better than it was.     Great video! Also some great websites and youtube channels--your's of course; Mediterranean dish (great easy Mediterranean dishes); Pick up Limes is good but Rainbow Plant LIfe to me is better (try her lentil spaghetti sauce--easy and wonderful), Helen Rennie is a cooking teacher who I believe is following the Mediterranean way of eating (I love her easy Almond Trout recipe--is a go to and takes 20--a little butter but not too much) as well as Melissa Clark (has some super hard stuff too). BTW, almost never call it the "Mediterranean diet", it's only a "diet" in the sense that it is what someone eats. I think a better term is Mediterranean way of eating (though perhaps too long!). And yeah I still go out for Chinese, etc (though I do fast food almost never).

      BTW, much prefer jarred or pouch beans, but not too easy to find in the US.

      So so funny, Jay J. All the mentions are favorites of mine too! And since the beginning, my channel tagline has been 'eating the Mediterranean way every day'! In fact, I went so far as to tell myself I would NEVER use the word diet. But I discovered that unfortunately in order to be "found" on TH-cam you have to use search words that people use too...and that meant I had to get off my high-pony and start incorporating the word 'diet' in my work...but if that's what it takes to help people find my story, it's worth it. Just unfortunate that the term "diet" has come to be far better known as a short-term unhealthy fix not a long-term healthy way of eating. I really appreciate the time and thought you put into sharing comments with me and others on the channel, Jay. it's much appreciated! Cheers, Caroline

    I'm confused. I thought pasta wasn't allowed because it is made from flour???

      Hi Deborah - Not at all. Pasta is a mainstay of the Mediterranean diet. It is best if you can find pasta made from whole grains, but having pasta a few times a week is very typical and not at all a problem. Especially when it is the base for the opportunity to top it with tons of healthy vegetables and homwmade tomato sauce! Cheers, Caroline
