    This has more to do with eating certain kinds of fats than the fat percentage, because butter or margarine is 80 percent fat, so 8 ounces of this fish is equal to only 2 ounces of butter (1/2 stick of butter) (Edit- Yeah just looked it up, 90% of the fats in this fish are indigestible wax esters, similar to what is found in beeswax) So it is not because the fish is so fatty, it is specifically because of the type of chemicals in the fats.

      I was thinking the same thing. You can eat a very large ribeye at a steakhouse, fats and all, and whatever other fat laden sides that come with the meal and probably feel quite okay.

    After eating so much of this at a buffet, I had weird bowel movements too. Not discomfort, no cramp, no stomach pain, just oily crap. It was really weird.

      here in my home country, that is called "ipot ipot." After eating that fish, When you walk, oil drips from behind without you realizing that it has flowed down your legs. It's oily and smelly when you eat it. The flies will sure follow you behind your legs, hahaha! 😄

    I had this regularly without digestion issues for years. Was my favorite sushi. Nothing like it - melts in your mouth, texture is incredible. I only had 1-2 nigiri at a time.

    You are a wild man Reed. Serviced a restaurant years ago that made Blackened Escolar its signature dish. They made a fortune with it. Yes it is so fatty and moist you can cook it for 3 hours and it won’t dry out. Great video my man! Well done!

    I bought a 10 oz block at my local fishmonger, as white tuna. Ate it raw and loved every bit of it. Then I decided to find out what white tuna was, and it’s possible side effects… that was a tenuous wait, and I had no side effects except the anxiety, lol.

      Me and my partner have never had symptoms eating it, and we have usually 4-6 thick and juicy pieces. We love it too, one of the best tasting fish out there.

    Usually remove all skin - belly area and bones - cover all meat with salt and let sit in refrigerator for 5 days - remove rinse off and cook as needed

    Hahaha. Great vid man!! I ate a bunch one time at our local sushi place. My boss ordered too much of it. It was called “white tuna”. I had no idea you should not eat too much back then. The craps were monumental. I didn’t have any pain or discomfort either other than the butt spray. I still order it sometimes but only two pieces of nigiri.

      It’s so wrong and misleading that they call it white tuna The first time I had it, I thought the sushi chef was trying to describe albacore.
      I will say that having spontaneous uncontrollable but leakage in public is not a good thing.
      I don’t care how good it was, never had it again. If your body can’t digest the wax it contains I’d rather not have any.

    Like being on Orlistat for weight loss and eating a big portion of chips (French fries) and deep fried battered fish. The fats don’t get absorbed or broken down, they just pass on through giving you a well oiled ring!

    I really appreciate the step by step instructions. I've learned a great deal and my fillets are a lot cleaner with less waste and the carcasses have a lot less meat left on the bones. Can you do a short video how to sharpen your knives? I have several Dexters and regardless what I do, I cannot get and keep a sharp-sharp edge. Thanks.

    I think the bowel movement phenomena associated with eating escolar is called "keriorrhea", which basically means you're voiding orange-colored wax.

    SABLE FISH, ( BLACK COD) (Taste about the same are also very oily taste buttery they are also called butter fish. Buy they are safe as their oil is of a different type. They are 2 completely different fish. Many say Black cod is superior tasting compared to Escolar.

    i first saw this fish in Extreme Fishing Robson Green season 1 and man it looked quite sketchy. I also read his bio book on this particular episode and he didn't say it on camera but after having a taste of the escolar, he ended up having severe diarrhea. lol,
    i looked this fish up further and apparently in Japan, the smugglers label this as' White Tuna'. pretty cool to see this fish further up close

    I got a pound of Escolar and the best piece was the eye of the high loin. Shout out to New Sagaya fish market in Anchorage AK. Yes I got the runs but it was quite a tasty fish!

    I'm super late to this party, but since everyone's sharing their orange poop stories... I ate what was probably 8 to 9 ounces of escolar (cooked, deliciously!) in Mexico about ten years ago. I did get cramps and diarrhea, but the discomfort was mild and it didn't last long. However...the next day I had the orange oil making its way into my underwear and shorts independently, sans poop or bathroom trip. I was eternally grateful for Google for explaining to me what the "white tuna" actually was and assuring me that my insides weren't melting away and oozing out. Thanks for this very entertaining video!

    Had this at a great seafood buffet in Phoenix before I knew anything about the fish .... It was simply labeled "butterfish" and of course it made no mention of any ill effects. I kept going up for more... When I got home my stomach felt "different" I just figured it was the buffet as a ate a ton of other stuff. In summary it wasn't too bad... It was worth it.

    OK love all your videos , but this one takes the cake. That being said. I once ate a whole fish, as we call them in the caribbean, (oil fish ) never got the runs, took about a month or 2, but never any issues. Got it from a long liner that warned me about them. My dad was with me and said it’s sweet fish when you cook it the right way. We did and loved it!! Hope you’re ok dude!! Lolol~!!

    It’s one of my favorite sushimi and I catch them myself. Escolar AKA white tuna is meat butter. We offer it to our Japanese friends down the street and they won’t touch it.
    My brother and I ate closer to a pound each and had no issue other than that bizarre thing you mentioned. It was oil beads balled up on the surface of the shitter.

    The problem with escolar is that it's mislabeled as other kinds of fish, usually tuna. That is illegal.

      Not all oilfish are the same. The issue with escolar is that its oils are “waxy” oils that are completely indigestible, so they aren’t absorbed at all and literally pass through the entire gut, lubricating everything on the way…

    It's a great eating fish, but the orange diarrhea that occurs is hideous! I had no warning, then boom, out it came! I had to be in the immediate vicinity of the toilet for the next two days. And when I meant immediate vicinity I mean no more than 6 feet away. I literally slept in my study due to its proximity to the toilet...it is that bad!

    The fish eats a lot of food containing wax esters (think bees wax or carnuba wax) that it cant metabolize. When we eat it, we are basically eating a laxative.

    In 1998 Lay's introduced versions of Ruffles and Doritos that were made with "Olestra", which had all the deliciousness of real fat but contained molecules too large to be digested. Initially, sales exploded. Then bathrooms did. This sounds very similar.

    Over 20 years ago I ordered the tuna special at my favorite local restaurant, and it was delicious. Later that night, however, it began and lasted well into the next night. I dared not leave the house in case I had to use the toilet. And it wasn't the "normal" runny stool, it was bright yellow and waxy in appearance. Flash forward 15 years later and I read about escolar, how it is commonly sold by unscrupulous fishmongers as tuna to restaurants. Then it described the symptoms, and suddenly I realized what had happened all those years ago! Apparently I'm one of the 10% of people that is super-sensitive to escolar. I've never ordered tuna at a restaurant again for that very reason, you never know what it is and the restaurant doesn't know either.

    Haha! I didn't know it's been banned in Japan since the 70's, but I can understand why.
    I was a fishmonger for a while at Whole Foods in the late 90's. We started selling this "new" fish in place of Chilean Sea Bass due to the unsustainably of C.S.B at the time.
    Escolar was a huge hit and one of our top sellers until too many people reported having severe diarrhea after consuming it.
    It happened to me, and it's unlike any diarrhea you've ever experienced.
    It's literally like your butthole turns into a corn oil fountain. It comes on instantly with no warning, and you're just spurting a golden, oily substance out of your ass for what seems like an eternity. I had to wrap toilet paper around my hand like an oven mitt multiple times to wipe, because it doesn't absorb into the T.P., it just smears around all over the place when you try to wipe.

      If necessary, yes. But typically I would avoid freezing a fish for storage. The escolar though lives up to it's rep, friend. Very fatty, mild, excellent on the grill / dry heat and excellent uncooked....in small amount and imo.

    I have had escolar sushi here in Florida. The taste is okay and the texture sort of unctuous… I’ve never experienced a laxative effect but I usually don’t eat very much in a sitting.
    I’m told that if you try eating coelacanth, which occasionally is caught and even sold though it was long thought extinct, it has a similar laxative effect. Matter of the fish’s preferred diet, I understand.

    I avoid any restaurant that serves white tuna or escolar. It's cheap fish and it can cause huge digestive problems. Not worth the risk to consume a fish with indigestible waxes and oils.

    I had cooked escolar in Seattle. When I woke up in the morning my bed was drenched in sweat. Then I went skiing . And I never had any funny poops.

      The problem is the oils and wax in escolar are indigestible and cause your gut to protest.

    Freezing food doesn’t kill bacteria ik this from since in college we tasted some different meats left it in room temp, boilled left in the sun to dry, smoked and frozen then only ones that had zero bacteria to speak of was boiled of course but sun dried and smoked did very well as for the frozen when it thawed almost all the bacteria came to life as they can hibernate

    It is white castle of fish, or taco Bell.. , they call it white tuna in America.. grilled collars are awesome but it is the waxy oils that make you shyte not anything else.. but it is like eating a quart of ricotta cheese if you are lactose intolerant
