I’d add aviation nerd seats at the front of the economy, which cost slightly more, but give you more flight information on the entertainment display, including the tail number of the aircraft right under the charging ports, noise-cancelling earphones, artificial horizon and a map including other aircraft on the entertainment display, plus some interesting facts placed in loading screens. These will also include a pin for the young ones in these seats.
The ULCC model is ruin the experience as much as you can get away with, but convince the passengers they're saving 5 cents. But they'll get good press even if they run a tri weekly service and you need a quarter to use the toilet because paying to breathe is "innovation". All you really need to decide is how terrible you'll be to your base economy, how much you'll charge for what economy was 20 years ago and if you'll have something better than that.
I was thinking I'd have a 3-3-3 layout in economy because it's more passengers than a 2-4-2 layout. A 2-class layout across an all 787 variants fleet, economy and business. So passengers wouldn't go aboard expecting a 1st class experience and wouldn't be disappointed there isn't as a result. You could probably say it's effectively a 2½ class experience where economy could upgrade their tickets by paying extra for a few frills to get a premium economy feel. I'd put the flight tracker on every screen for all passengers to enjoy. Suitable in-flight entertainment for all passengers as all flights would be medium to long haul. Partner airline deals for any short haul connections. I'd have Internet covered in the business class fare, upgradable to be included as an extra in economy tickets or pay in flight option in economy. I would do a deal with a partner airline for lounge access except maybe have a lounge for the airline at the home base in Shannon. I'm coeliac so I would ensure that all food for all passengers on all the airline's planes is gluten free and coeliac safe. But I wouldn't advertise specifically for coeliacs or that the food is gluten free so that people who aren't coeliac are not put off flying with the airline because they think gluten free will affect how it tastes or think its too "niche". Business class would have lie flat seats and privacy screens. I'm not sure what the layout would be. Perhaps 2-2-2. Maybe ⅓ Business class by cabin area and ⅔ economy seating by cabin area. I would ensure the website and online booking process are easy to use and intuitive as a priority to help people choose my airline for their travels. I think the cabin crew calling Business class passengers by name would be a personal touch that would encourage first time Business customers choose my airline in the future.
