Amazing Berry Chantilly Cake Recipe

    I worked at Whole Foods bakery for 6 years and this is how we made our berry Chantilly frosting
    8oz room temp cream cheese
    8oz room temp mascarpone
    2 cups of heavy whipping cream
    1 1/2 cups of powder sugar
    1 tsp of almond extract
    Mix the cream cheese and mascarpone cheese until combined add the powdered sugar and mix until incorporated and finally add the heavy whipping cream and almond extract on low and then speed it up to medium high speed until light and fluffy careful not to over whip it or it’ll be grainy. And that’s it you have the Whole Foods Chantilly frosting ☺️☺️

    UPDATE: I made this this morning and I would recommend putting the icing mix in the fridge to firm up for 30 minutes. Mine was VERY soft and weepy. Still it was delicious. Thank you so much. A friend's birthday is tomorrow and this is a perfect summer birthday cake!

      I made the cake also and had the same result. The frosting was too runny at first. I had to do a crumb coat, then put the remaining frosting and the cake in the refrigerator, then finish up. Still, I couldn’t get the smooth finish like John did, but the cake was still very impressive and looked and tasted fabulous.

      My frosting melted (even after 30 mins in the fridge) so I didnt use it for the covering. I made a different frosting to cover the cake.

      For this type of frosting, I always add some instant vanilla pudding to help stiffen it up -- works like a charm. For me, the sugar free stuff works best

    I made this cake yesterday for my husband's sweet aunt for her 81st birthday!!!! She loved it so much she wants us to make it every year--and she is an amazing cake baker herself. We are having excessive heat warnings where we live, (heat indexes to 115) and this cake is the perfect, light, fluffy and cool antidote. Thanks, John!!!!💞💞💞

    My husband went out grocery shopping today so he can get me all ingredients for this cake and I made this today. Omg John! He enjoy eating it and almost have eaten half of the cake I made. Your Chantilly cake recipe is so decadent, soft creamy frosting and the cake flour made the cake so fluffy and light! Amazing! Thank you for this recipe.

    This lovely cake combines a nice buttery yellow cake, berries and whipped cream, all early summer standards, but this is a prettier and more elegant presentation than a typical strawberry shortcake. Thank you John!

    I’m testing out different cakes for a fresh fruit cake I’m making for my FIL and BIL birthday. I only made the cake portion of this recipe and it turned out flavorful, had a nice light texture that reminded me of boxed cake and had the perfect level of sweetness. I added almond extract and it elevated the flavor but I think any flavor would work. This will be my go to white cake recipe! It’s the perfect base recipe and versatile.     I made it yesterday for my husband's birthday and everyone loved it. The chantilly frosting was amazing. I used homemade berries jam.

    I made this yesterday as listed minus 2 cups of the icing sugar. It turned out pretty awesome. There was just enough icing for covering a 1" @ 4 layer cake.
    Changes:
    1 cup icing sugar instead of 3 per John's recipe BUT added 2 g gelatin to compensate.
    I bloomed the gelatin in 73 g cream them microwaved it carefully for about 20 seconds to melt it and make the cream steam.
    I then whipped the cream/gelatin mixture until soft pudding consistency and added it into the cheese mixture and then whipped the cheese mixture for a quick 30 seconds. Added the rest of the whipped cream exactly as per John's instructions.
    Used the whole tub of mascarpone cream 475 g vs only 450 per John's recipe.
    Because it had less sugar- I specifically hunted for sweet fruit- green grapes, mangoes, lychee, strawberries. I hit the jackpot.
    A kind shopper at the grocery store gave me the idea of canned mangoes in syrup because the fresh ones were not ripe enough. Also used Canned lychee in syrup and fresh strawberries. Too bad I can't add pictures. It was beautiful gluten-free Chantilly cake!
    I hope my coworkers find the cake sweet enough and the intended recipient finds it not too sweet as requested. Just like John said that mascarpone is like condensed whipped cream- I was going for a whipped cream taste. Yummm

      Update:
      The cake was a success! No leftovers!
      Based on comments on this channel about cakes melting - I inserted 2 large bubble tea straws as posts to stabilize the cake- a good move since the cake was at room temp at least 30 min for cutting and the cream was soft and airy.

    Made this upon request from my granddaughter for her princess 5th bday party. It was the most delicious and prettiest cake I've ever done. It was downed almost immediately.
    I'm going to need to go much bigger (pans) and double the berries for next time.
    They want it for Thanksgiving and Christmas now.
    I guess we have a new tradition and it's one I'd never heard of. She gave me her request and I put that in the search. I'm sure glad you had one available. It was a BIG HIT!! Thank you. P.s. I enjoy your singing, I too make up sings while in the kitchen.

    I just made this for my baby shower and made it a two tier using 9-inch rounds and 6 inch rounds. I discovered that using a half-recipe works perfectly for 2 6 inch rounds. The frosting recipe ended up being the perfect amount to do the whole cake semi-naked. It was a total crowd pleaser, even amongst the guests who weren't cake fans.

      I made this for a co-worker's wedding 2 years ago and everyone loved it. I had to practice getting the layers just right. And it was my first attempt at making a naked cake. Talk about challenging. btw, Whole Foods makes this cake and it's delicious but I think homemade is best.

    Here I’m again… on my way to make 2nd one!
    I used my own vanilla sponge cake biscuits but I used cream frosting from this recipe and omg it was easy to follow the recipe and it was so delicious! I loved the little hint of lemon zest in it, it brings some unbelievable fresh flavour that will be great for any special occasion! I just love it. Thank you John it was fun time to bake with you ( I like your explanation and little tips, for example how not to over whip double cream and just use hand whisk to finish it off) 👍

      Interesting 🤔 Would you layer the cupcake horizontal and fill the same way? Core the center and fill with jam and top with the frosting and berries?

      Yes! I’d take a melon baller and scoop a bit of the middle of the cupcake for the jam and chopped up berries, then do the frosting and the berries on top. I think it would be a very nice cupcake!

      For berry chantilly cup cakes I use a cupcake corer and fill with blackberry jam and add a blueberry or two. Then add the frosting and top with fruit

    I’ve recently tried mascarpone cheese and love it! I bought Murray’s. Very yummy, almost custardy. It’s actually imported and surprisingly costs less than the other brands. “Somewhere between butter and whipped cream, there’s mascarpone” is on their label

    That looks DIVINE! And that Chantilly frosting is absolutely dreamy!
    Sidenote: Watching people have to work around a Kitchen Aide Mixer gives me anxiety. Doesn't perform all that well and seems awfully hindering while adding ingredients. I'm all for the Bosch mixer, and would love to see you compare the two.

    Anothr tip for smoothing a cake, dip your spatula in cold water, shake off the excess (but do not dry it)

    This reminds me of that Porto's bakery berries and cream cake... I LOVE IT! but this one just looks and sounds amazing so im gonna make it for my 4 year old who requested a "berries cake" for his bday!

    Dear John- if I want to make a two layer 3 inch by 9 inch cakes, if I double the recipe, will that work.? Or a a recipe and a half? The cake looks so good with a capitol DELICIOUS! I just love your channel! You are such a great instructor and pastry chef. Thank you for sharing. Blessings.

    It look very delicious! Do you think I could use the filling in a wedding cake and cover it with regular buttercream? Is the filling firm enough? I really would like to try it

      For a tiered cake, I would say not firm enough. Perhaps for your top tier only if you go easy on the berries.

    Lord knows I needed this today! Love it! And the cake, too! I am allergic to strawberries, and I have found that blueberries are just fine all by themselves so I will create a Blueberry Chantilly Cake while my daughter and son-in-law visit this weekend!

    Why didn’t you use your go to cake strips around the tins when they were baking? Is it a must?

      I am a baker. And i never use any parchment strips or grease moulds. Sponge can't properly rise if the mould is greased
