I just found these bossfight tips videos. I've never come across a more creative method of doing this. Captions, slo-mo, rewinds, all extremely effective. Even if I disagreed with the strategies, I would still applaud your efforts. And you make some points about this particular fight that I've never noticed before. Bravo!

There is a 4th option for Friede on the 1st Phase. If you run towards her and stick to her, she will be visible when she dashes/jumpes. You then have to run towards her to continue seeing her and back-stab as she charges her attack. I also noticed that you can "damage" the Father in this Phase, but didn't notice a change in Phase 1's life bar.. maybe the second one? Probably none at all.
I was in NG+ too. I cheesed her with the Dragonslayer Spear. I'm also gonna share my strategy in case people are still struggling with this fight. DS Spear's L2 is very powerful against most of the humanoid enemies. Once you get the hang of it, it's very easy to proceed to second stage using no estus or just one. In second stage, I focused on father ariandel using grave warden blades with carthus rouge. Definitely the easiest part of the fight. Just look out for constant blizzard attacks of friede, that damage is very high. Summoning Gael might help. Third phase is exactly the same as first, use DS Spear and L2. You just need to be more patient, look for opportunities. 2 or 3 ashen estus should be more than enough for DS Spear. General idea is very similar with the strategy shown in the video, but I like using far reaching weapons as you don't need to get too close to inflict damage, making the fight way safer in my opinion.

In the first stage you can use arrow so when hit she then you will see she until the arrow is gone, the 3°stage is very dificult🙈

Celestial Emissary has one single life bar during the entire boss fight.
Ok, I'm not sure that's what constitutes a 'stage' though. I assumed it just meant a change in the enemy.
