    Looks fabulous. A suggestion from a Lebanese Australian - it needs more coriander and parsley in the falafel mix. If you also add a spoonful of bicarb soda, it makes the inside of the cooked falafel light and fluffy. Also a good idea to make double or triple the recipe and freeze the unused portion of raw falafel for use at a later time for another meal. The tahini sauce needs some garlic and a little plain yoghurt can be added to the tahini sauce to tone it down if needed. Love the pickle options in your recipe.

    People complaining that real falafel ´should´ be made with soaked and cooked chickpeas instead of canned ones are skimping over the fact that Jamie makes recipes really approachable for a lot of people who otherwise would never eat this. Using canned chickpeas is a lottt quicker and thus way more workable for a lot of people with busy lives.
    Isn´t it nice that by doing it this way, a lot of people have acces to a nice, tasty and healthy recipe that is very similar to the real deal? The magic of Jamie is that he opens up a world of food for a lot of food for people who otherwise would have no clue that those wonderfull dishes would have existed in the first place, and that is something to celebrate, not nitpick about details wether this or that should or should not be in it or is authentic

      If he would've deep fried them which is the norm, they would've disintegrated. So you're right this is a more approachable, healthier way of cooking them. But that's why you can't use canned ones for traditional falafel.

      @@sonnbonn I want to try to make Falafel next week. I didn't plan on deep frying them. Do I need to? I need to make them myself, because no restaurant in town offers some, that are done without the risk of crosscontamination with chilli (I am allergic to chilli).

      I work from 9am to 5:30pm and still have time to cook breakfast, lunch and dinner most days. We do falafel at home and it is very easy to leave chickpeas soaking in water overnight...the rest is done in the food processor! if you want to eat well and cook properly your food, there is no such thing as "busy life", as there is always time for everything as long as you take some time to plan. Jamie creates recipes that cater more for the lazy way most British people approach cooking and eating... In British culture, cooking and eating is a quick thing, something you do to keep you going (specially at lunch times), not necessarily an experience as you find in other European countries where cooking is an art and sitting down to eat is part of family and social life. I understand and have admired Jamie's approach to food but he sometimes can butcher recipes for the sake of making them "approachable" for the British public, when sometimes you just need to do it properly or else go and find it in your local foreign restaurant... or travel abroad.

    NB! If you don’t like the taste of soap in your mouth, just add Flat leaf parsley instead of the coriander / cilantro … 😅
    And don’t waste the chickpea water. Make vegan pavlova. Whisk the chickpea water with sugar until stiff peaks and cook like a regular pavlova. Top with the sauce and fruit to your liking❤
    I find this tips for chickpea water really good, now that eggs are so expensive ..
    do not waste good food😊

    Have you tried Egyptian Falafel? We call it Ta'emeyya!
    Made of crushed beans, soaked in water for a few hours or over night for better results, and then mixed with lots of greens (Coriander, Parsley, Dill, Leak) + Red onions + whole Garlic (peeled of course) + salt.
    Before frying it in deep oil we season it with black pepper, ground coriander seeds, cumin and sesame seeds (optional) then we add:
    1 egg. 🥚
    When we shape it we add sesame seeds on top then fry it, et voilà!
    You can use all the sandwich filling/sauces you have creaded and more .. try it also withfried eggplants 🍆!
    Delicious! 👌😋

    I made these falafels (added parsley and skipped the tahini) and also did all the other sides and yogurt sauce for a group of 6 for lunch on Saturday and it was a big success!

    You need to save the water from can chickpeas because it is the best vegan egg replacer. You can even use it as a sub for whipped egg whites. Never throw out aquafaba!

      I gasped when he chucked it down the sink, then proceeded to talk about not easting the coriander stalks! Chick pea water is great for making chicken tenders etc. A great replacement, and saves using an expensive egg

      I’m sure he knows this as it’s common knowledge but he uses eggs so probably has no need at this particular time. I still find it bizarre that the cloudy water can whip like egg white though

    amazing dish , everything came together so well. the freshness of the yogurt sauce with the pickled red cabbage chilli and cucumbers was insane. this one will go down in the books and be on the table more often 🤘 no matter what they say, you're amazing Jamie! your dishes always bring a smile to me while making and to the guests at the table while eating👍

    Some suggestions as an Israeli chef:
    1: put more greens. At least one Bouquet of parsley and one of coriander. The inside of the falafel needs to be green and its needs to so aromatic.
    2: don’t put flour in it!! You don’t need to, it makes the dough smooth and it should be grainy.
    3: put 1 T spoon 🥄 of baking soda. It will make the inside much fluffier and the outside much more crispy. Also it reduces the amount of gases you produce later on 😮.
    4: if you want it spicy, put green Yemen Schug in it and nor harisa.
    It matches the flavours and colour palette of this dish better.

      Ho and fry it in deep oil and worm the oil firs
      This way the falafel won’t observe all the oil like yours did
      Tehini is making with cold water

      We might find it a bit difficult to find green Yemen Schug in the UK especially outside of London. What is it and could we perhaps improvise or make it ourselves?

      Put in food processor:
      10 green chilli (with the seeds if you want it extra spicy)
      1 bouquet of coriander
      1 bouquet of parsley
      10 mint leaves
      A full pealed head of garlic
      A juice from one lemon
      1 ts cumin
      1/4 cup olive oil
      Salt and pepper by feeling
      1 ts sugar
      Bland it to not completely smooth past
      That is very good as a dip or a extra spicy chimichurry

      dont use canned chick peas, i tried it so many times with canned chickpeas and it didn't come out the way we get it ir from the arab restaurant. unless i used the normal chickpeas and soaked it for couple of hours

    I'll try this! I usually soak the raw chick peas - 24 hours - with bicarb soda - and also fava beans. Love coriander and parsley, hummus and all those things! When I lived in Sydney, I got the falafel recipe from the chef at Alibaba's - they were the BEST falafels!! Jamie certainly knows how to present and inspire! And makes it look so easy!

    I know it wouldn't be soooo quick, as I'd need some prep time, but I'd appreciate it, if I could find the equivalent weight of dried chickpeas as well 🤩 Maybe for future recipes? BTW, it'd be 2 x 80g dried chickpeas, when 2x240g drained net weight considered of 2x400g tins 😊

    I'm impressed with the speed at which all those nice dips salads etc appeared there Jamie. I strongly suspect that we culinary mortals would struggle to conjour so, but this falafel recipe does look delicious indeed, I shall be trying these with a few olives etc at the very least..       @@nachis3 It's harissa paste - can be found in Middle Eastern markets, online, or even at gourmet markets. If you click the "cc" on the lower right of the video, you can also see close captioning. I'm surprised he added so much as it can be quite spicy although brands vary.

    A great presentation, thank you for sharing. I prefer falafel made with "fava beans" instead of "chick peas", Egyptian style. Should you have tried it, I would be interested in your take on it. Again great presentation and thank you for sharing.

    Well I make mine from lentils, and use hummus from chickpeas as a side dish! Definitely more coriander and lemon into the mix, I learned it from Lebanese chef.

    Oh Dear, Jamie, not wasting stalks but throwing away good chick pea water. Known as aquafaba , it can be used as a substitute in many recipes that call for eggs or egg whites. Meringues, fancy, foamy cocktails, mayo-all sorts!

      How did you get on? I see so many people saying you absolutely cannot used canned chickpeas, only dry will do. But I don't find it easy to get hold of anything other than cans. Did you get a good result?

    Gasp, you can use the aquafava to make vegan mayo, or even egg replacement. This looks delicious, good for keto diet if non carb holder is used to make the sandwich. Thank you

    I heard xan chickpeas makes it too watery. Best use fresh chickpeas and soak overnight. Use chickpeas flour too in blender and cilantro .

      Oh good! THANKS for that... I bought some dry chickpeas today and a small bag of Bob's Red Mill chickpea flour... Then tonight I watched a couple falafel videos, Ibut haven't come across one yet with chickpea flour. I have everything for the falafels except maybe Allspice. I'll have to skip that.. I have plenty of cilantro though! 😋 I'm glad you mentioned that flour!!! xoxo 🤗
