  • Spinach Lentil Curry Recipe for a Vegetarian and Vegan Diet | Indian Style Spinach and Lentils

    ▶️ RECIPE INGREDIENTS: (4 servings approx.)
    👉 To cook the Red Lentils:
    3/4 Cup / 140g Red Lentils
    3+1/2 / 800ml Cup water
    1 Teaspoon Turmeric
    1/2 Teaspoon salt
    👉 Curry Ingredients:
    3 Tablespoon Cooking Oil (I have used light olive oil)
    1 Teaspoon Cumin Seeds
    1/2 Teaspoon Chilli Flakes or to taste (you can use 1 to 2 whole dried Red Indian chilies if you prefer)
    1 Cup / 130g Onion
    1+1/2 Tablespoon Garlic - finely chopped (4 to 5 garlic cloves)
    1 Tablespoon Ginger - finely chopped (1 Inch ginger)
    1 Teaspoon Ground Coriander
    1 Teaspoon Paprika (NOT SMOKED)
    1/8 Teaspoon Asafoetida (hing)
    1/4 Teaspoon Cayenne Pepper (Optional)
    2 Cups / 300g Tomatoes - 3 medium size
    Salt to taste (I have added total 3/4 teaspoon pink Himalayan salt)
    200g / 6 cups approx. Spinach Leaves
    👉 Garnish:
    1/2 cup / 20g fresh Cilantro / Coriander leaves
    Drizzle of Olive Oil (I have added 1 tablespoon of organic cold pressed olive oil)
    Lemon Juice to taste
    ▶️ METHOD:
    Thoroughly wash the red lentil a few times, until the water runs clear and then soak it for 1 hour.
    Drain the water from the soaked lentils and transfer it to a small pot. Add turmeric, salt and water. Cover and bring to a boil. Once it starts to boil, give it a mix. Reduce the heat to medium-low, cover and cook for about 25 minutes or until the lentils are cooked. Once cooked set aside for later.
    ✅ 👉PLEASE NOTE: The cooking time of the lentils depends on the quality of the lentils. Sometimes one batch of red lentils are drier than the others and may need more cooking time. SO ADJUST THE COOKING TIME ACCORDINGLY. It took me 25 minutes on my stove.
    Heat the oil in a pan. Once the oil is heated, reduce the heat to low (this will prevent the spices from burning). Add the cumin seeds. When the seeds starts to splutter, add the chilli flakes and fry for a few seconds. Then add the onion, 1/4 teaspoon salt and increase the heat back to medium. Fry on medium heat until the onion is soft and browned. (Adding salt to onion will release it's moisture and help it cook faster so please don’t skip it).
    Add the ginger and garlic and fry for another one minutes or until fragrant. Add dry spices (coriander, paprika, asafoetida and cayenne pepper) and fry for about 30 seconds. Add the fresh chopped tomatoes, mix well and cook for 1 to 2 minutes or until the tomatoes are slightly soft.
    Add the chopped spinach leaves and mix well. Right away add the cooked lentils and mix well. Bring it to a boil and cook for about 3 minutes or so. Turn off the heat.
    (Please Note: If the curry is too thick for your liking, you can thin it out with boiling water. DO NOT add cold water to it, otherwise it will ruin the taste)
    Add the chopped cilantro, drizzle of olive oil (and lemon juice to taste). Mix well. Serve hot with a steamed rice/naan, green side salad and some pickle.
    ▶️ IMPORTANT NOTES:
    👉 How to know if the lentils are soaked well? You should be able to cut a lentil piece with your nails, effortlessly. If not, then soak longer
    👉 Cooking time of the lentils depends on the quality of the lentils. Sometimes one batch of red lentils are drier than the others and may need more cooking time. SO ADJUST THE COOKING TIME ACCORDINGLY. It took me 25 minutes on my stove
    👉 Adding salt to onion will release it's moisture and help it cook faster so please don’t skip it
    👉 Every stove is different so regulate the heat as required. If at any point you notice the pan is getting over heated, then reduce the heat
    👉 If the curry is too thick for your liking, you can thin it out with boiling water. DO NOT add cold water to it, otherwise it will ruin the taste

      I was going to make some popcorn to sit and savor the new Food Impromptu but couldn't take my eyes away from the screen. I knew by the description alone that I would eagerly drop other matters to make this recipe.
      I reduce the portions of salt and oil in some of your recipes, but that detail diminishes not my unconditional love for them.

    I'm not one you would consider to be plant based or big on Indian cuisine, however I do like spicy and I do like BIG flavor. I am openminded to Indian cuisine and I do try it when the opportunity presents itself. I was actually on TH-cam yesterday morning looking for ciabatta bread recipes when this beautiful photo of your colorful Spinach Lentil Curry caught my eye, and I couldn't stop thinking about it. As a matter of fact today I googled an Indian market near me and went there to buy the necessary ingredients and came home to make this dish. I was like a child on Christmas morning tearing through the kitchen, and when the dust settled there was that same beautiful picture, and boy did it deliver !! I couldn't believe the bold wonderful flavor, or that I had actually made this myself. This is an absolute winner, if you think the photo is beautiful it tastes even better. I also came across the Green Coconut Curry, also a very pretty picture. Can't wait to make that one next. So glad I came across your recipes, thanks so much.

    I just made this. I didn't have the one Indian spice used for digestion, so omitted it. I just used a pinch of cayenne pepper and it is still spicey, but loving it! I'm eating this as we speak....yum! Thank you!

    Whoa! That looks so delicious and so simple. I just went to Amazon and ordered some asafoetida, my idea of an adventure since I've never had it before and only heard of it once before. I'm trying to up my iron and reduce my carbs. I've become a red lentil freak. Lol.     I made this last night and it was truly exceptional. I didn't make rice, so just had a bowl of the curry by itself. Amazingly delicious. Thank you so much for such a great curry. I'm going to make it again today and take to friends who I know will love it.

    Not related to the food itself, but the person operating the camera and lighting really knows what (s)he's doing. Great control over the depth of focus, angle of incoming light source, continuity of the balance between daylight and artificial light, colour range - all very very good.

    Thanks you so much for your nice recipe. I do a similar recipe with the same ingredients, but I add Coconut Milk and a little bit of Garam Masala; just a little bit this is for 1 lbs of beans! The tip to have a super nice flavor is in the Coriander seeds, the Ginger, and at the end a little bit of Cilantro, I also add 1 teaspoon of sugar! Just a tip, I add the Spinach after soup is cooked so that heat doesn't kill the nutritional value. Gosh people go crazy for my soup no kidding. Blessings your way!

      Snippe -- the combination of aromatic spices used is a curry. Curry is not just one spice combination you buy in a jar under the name "curry".

    i used to buy a soup from Whole Foods market called red lentil curry soup that was almost identical to this - it was the best soup ive ever had in my life - so im going to try your recipe, it looks like it should be just as good

    Great recipe, as an Indian can vouch for authenticity. Beautifully presented. A suggestion if you're not vegan: Add a spoon of ghee (clarified butter) at the end instead of olive oil. Simply yummm!

    I've decided to try and make at least one meal a week following a Food Impromptu recipe. This Lentil Curry and Spinach was my 1st adventure, and boy was it good. I'm really looking forward to some more delicious meals..Thank you for your guidance.
