Finally, fried chicken recipe that i can agree with. I can confirm that this recipe is better than any tasteless breadcrumb recipe. For me i add some rice flour to the flakes it'll become crispier.

腌制鸡排的时候,我建议除了酱油,在把洋葱,芹菜,胡萝卜按照1:2:2的比例用石杵捣出汁液一起腌制,炸出来的鸡排出来经典的面粉焦化香味,还带着一股蔬菜香气,去腥解腻,最重要的是多汁。我可以100%跟大家保证绝对比小高姐现在这个方子更上一层楼。我敢这么打保票的原因也很简单,这种蔬菜腌制的办法是人家北京便宜坊焖炉烤鸭的独家制作方法,不好吃才有鬼了
我特别讨厌国外鸡胸肉的异味,您这个方法能去除吗?
Jakø's vlogs 我也在国外,也有这个问题。我的解决方法是:先泡水,把血水都泡出去。然后在这三种蔬菜汁的基础上额外引入葱姜水和少量的花雕酒腌制,炸出来后完全没有异味。事实上,可以给鸡胸肉排排刀再腌制,更容易入味去腥
Yi Luciano 前一段时间老饭骨发的门钉肉饼也用了相似做法,用的是胡萝卜,香菜,紫葱头,芹菜,看来这个蔬菜汁做腌料做馅料都能用
其实我可以跟你分享我的西式的做法我们一般用味精 和胡椒盐 和少许的paprika 和酱油腌制 还有黑胡椒粉 腌制大约一天 然后用薯粉和鸡蛋 也可以用面包碎 把腌好的鸡扒粘鸡蛋在粘薯粉然后下去炸炸好后也是好吃很不错 这个是我之前在五星级酒店自习的做法

试了这个方法做鸡腿肉,本人技艺不精,挫好的面片在沾几次肉接触一些水分后就结块了,炸完面片比较硬,口感不好。还是用回沾干粉-沾水-沾干粉的流程了。
以前對吃跟煮都不那麼感興趣,自從跟著做成功這酥脆多汁的雞排,料理便成了日常中一大趣味,也間接地教會我如何享受生活✨

可以用butter milk来腌渍,更保水,也更容易挂粉。另外炸的时候可以先用低油温炸定型,再高油温炸上色

我用气炸锅做个小高姐的盐酥鸡就很成功,这个方子可以直接用气炸锅试试啊,面糊里放点油进去,两面喷上油,炸鸡模式,中间看情况翻面和补油。
