If I buy potatoes from the wet markets here, which variety is suitable for this dish? If I understand you correctly, I should get the starchy variety, not the waxy ones, right?
Thanks and welcome. Yes u r right starchy potatoes will be a good fit to this dish. Not sure if u can get Russet or Yukon Golden potatoes easily in HK, otherwise I think those brushed potatoes (with a lot of mud on surface) in wet markets can do as well.

Keep warm應該唔會縮好多水,但如果你係預早好多煎,到食果陣佢會變得冇咁脆

请问1.4公斤土豆只加了7克盐会不会味道有些淡呢?还是说为了突出奶油和黄油的香气,特别做成比较淡的口味。连小狗狗闻到香气也想试试食!🤩
兩百多克的奶油混合物加入7克鹽我覺得很夠味了~不然你試味後覺得不夠的話可以多加一點。土豆在冰箱裡把奶油混合物吸收一整晚後會變得很入味~

唔好講學,大家交流啫~ gartin 係指面頭有啲麵包糠或者芝士,做法同dauphinoise 一樣,只係上面鋪多層breadcrumb/cheese。所以有時係會叫Gartin Dauphinoise~ 最後連埋焗盤成個上枱咁食~
