Man oh man this recipe was a winner man! I’ve been curious about oxtail. Never had it and originally considered Sous vide but didn’t want to wait that long. Your video popped up and I’ve gotta say THANKS! Can’t wait to try more of your recipes!
Good video Joe. I love oxtails. This is the kind of country meat I grew up on. I have a pack of pork neck bones and a pack of back bones. I am going to cook the back bones in the oven and have them with Karut.
Beautifully done! I love oxtail. I usually do a smoked Jamaican style with oxtail. Another favorite of mine is smoked Osso Bucco using beef shank. New Zealand Beef Shank is available here for me. I would love to see your version of smoked beef shank. I live in the middle east and have not been able to find beef cheeks. They are rare as unicorns here. Lamb Shank and Lamb shoulder are also amazing when smoked low and slow.
These look Fantastic Joe. I’ve been smoking Ox Tails for years. Always seemed to be an under the radar cut for the BBQ guys but I love them on the smoker. I love your slather and gonna give that a go next time. I normally smoke them for a few hours to build a bark then tops them In An aluminum tray over some fingerling Potatoes with a bit of beef broth, but maybe I’ll toss in the rest of your slather? Sounds great. Thanks for the video and the inspiration.
Joe looks fantastic I stew mine Caribbean style but I think I’m gonna try your method also what do you do with the vegetables do you just use those for flavor
dang this looks good, and it also got me thinking...what about making smoked birria tacos using this method, also with cheeks and oxtail? I think braising in the broth would be great after the main smoke on the meat.
You should have threw some sauteed garlic in a tablespoon of Browning seasoning in there or Browning Sauce as some people call it that would have really pushed it over the edge For You Joe
Hey Joe can you actually smoke & braise oxtail & beef cheeks together at 250 5/6 hours. For some ox tail cheek tacos 🌮?? I was thinking the cheeks may over cook but that’s just my scary ass thoughts 😂

Oxtails have been so expensive for the last couple of years though, like I paid 40 dollars for about 3-4lbs of them

Why did you braise them? If you wouldve smoke low n slow after 3/4 hours it wouldve been fall off the bone tender
