    I’ve tried lots of recipes, and I mean loads, I’m not the best with spicy food anymore, I’m 60 now and it can hurt my tummy if I get carried away. My mind still wants it my body says go away, lol. You have a natural gentle and genuine way of showing your recipes. Long may it continue xx God Bless xx

    Sooo glad I found your channel. I love Pad Thai but it's hard to find a good one here. I've had to make all my own Vietnamese Food as well so I'm definitely going to watch more of your videos for some Thai Food!

    Omg i just made this and it tastes soo authentic even though I used sweet onion instead of shallots and 2 types of brown sugars since I dont have palm sugar also used red pepper flakes instead of whole chile and WOW SOO DELICIOUS

      Good to know about the brown sugar. I just used all my palm sugar up that I had in the pantry. I have everything fir another batch except palm sugar.

      Hey, I am so happy that you gave it a try and it turned out good for you. I hate ordering pad thai out at restaurants because it seems to always be hot or miss in terms of how good it is. So much better to make it at home.

    This recipe is amazing!!
    I made two batches and put them in food saver bags
    I only had palm sugar in a jar and tamarind concentrate. I just had to make a few adjustments.
    My family LOVES it.

    Just made this last night. It's the best pad Thai sauce I've tried so far. I did add 1 tbsp of black soy sauce though. Thanks for the recipe.

      I discovered the difference adding 2 tablespoons of soy sauce made for my Pad Thai recently. It is sooooo much better that way. (I don't add any salt in otherwise though)

    Khup khun kha, from a woman who was adopted from Thailand by Swedish parents, and who's trying to learn how to make none spicy Thai food. I also love chicken Satay and coconut rice. My parents didn't like spicy food so I'm not used to spicy food. My husband's green curry is gorgeous as well, and I bought a jar of green chilli paste

    Edit ...what if we dont have palm sugar ? Can we add brown sugar or jaggery?

    Good morning Mrs Sirirat. Thanks a lot for sharing your Thai recipes. I have been to Thailand 2 times already and i am just crazy about the food there.. so delicious. I would like to have the recipe of the hot pepper sauce that vendors have on the streets. Some is red and some green. When you order food they will give you a little plastic bag with hot sauce in it. Wondering if you can help. Thanks and keep the good cooking . Mike

      Hi Mike, so glad that you have visited Thailand before and love the food. About that sauce, I am thinking it is just the standard Thai dipping sauce with chili, vinegar, sugar, shallot, and lime. We have so many different kinds of sauce, it seems like there is a different sauce for every dish. Do you remember what you ate it with, fried chicken, or seafood, or??? It might help me identify what kind of sauce it was if I knew that.

I had that sauce redish color with cilantro in it when i had some fried chickens and rice on the street close to Hotel Grand Diamond on Petchburi Road close to Platinum mall. the taste was hot but still not so hot. Also i am wondering if you could publish the recipe for that Fried Chicken that they have on the street vendor cart. Tasted even better than Kentucky Fried C......

      I am actually going to use it in Friday's Pad Thai video. When I make it this sauce I like to make a lot, since I use it on other dishes too.

    Hi Siri im new to Thai food and i was wondering what is palm sugar and what kind of sugar do you suggest instead??

      Palm sugar is made from the sap of a palm tree. You could use brown sugar as a substitute.

    I'm just asking because I'm trying to learn. Is it suppose to be that thin? I've seen many other videos on TH-cam and the sauce is a lot thicker. Either way, I saw one of your comments about you making Pad Thai in another video so I'm going to try to find that video right now. Thank you for your recipes!

      Hey, thanks for the great question. Since I make my own tamarind paste it comes out a bit thinner than store bought tamarind paste. Also, when it cools a bit the sugars will thicken up. My current Pad Thai recipe is here: th-cam.com/video/2CQZlyhN28s/w-d-xo.html

      I actually go for a thinner sauce, pad thai should be a dry dish with the sauce infused into the noodles. If the noodles are covered in a thick sauce it's a poor pad thai.

      This is just the sauce to make Pad Thai, but I bet if you tried Pad Thai next time you go to a Thai restaurant, you will like it.
