You can tell Aunty's had this stall since forever solely from how totally automatic and sure her movements are. It's always cool seeing a professional at work like this! I wish I could try her food, too.

@@stupidass3791 the wok is seasoned which stops the rust from getting on or into the food. As for the sandals, it’s just Asian culture. Everyone in my family including myself have scars all over our hands and feet from oil splatters
Seasoning doesn’t trap the rust in. It still gets into the food.

What I liked most was that as well as wearing a mask, she put a hairnet on before she began work. it might seem like a small thing to most , but those of us who've worked in food production will understand how important it is.
It tells me that, though she is a street food vendor, she takes great pride in her work and her product. It is not merely how she makes her living. She genuinely loves cooking food for people and is dedicated to giving them the absolute best she can make... and that includes taking food hygiene steps you'd normally see only in off street restaurants and in food manufacture.

Her wok rusted. You can see when she cleaned it with cooking oil. Brownish colour on the paper towel. It’s the brownish silver parts of the wok. She should coat it with cooking oil when she keeps it at the end of her work. She also needs to re-season those affected parts of the wok.

I love Pad Thai, and have been known to make a pretty decent batch of it, myself. In fact, I fed a room full of happy drunks with my Pad Thai the one time. But mine has nothing on the food this auntie is making here because she's been at this for decades and knows how to make it better than I may well ever! I'm glad y'all got to experience this auntie's cooking!
