How To Make BOMBAY POTATOES (Bombay Aloo) - Al's Kitchen

  • Bombay Potatoes are probably one of the most popular side dishes on any Indian Restaurant Menu. I have formulated a very quick and easy recipe that can be produced in a very short time. Flavours, textures and colours are all abundant in this delicious savoury dish!!
    Ingredients
    1 Tbsp Butter Ghee Oil
    1 Tbsp Coconut Oil ( Feel free to use Veg oil)
    2 Very Large Waxy Potatoes ( Cyprus or Harmony Recommended)
    1.5 Tsp Cumin Seeds
    1 Tsp Turmeric Powder
    1 Tsp Chilli Powder
    1 Tsp Yellow Mustard Seeds
    0.5 Tsp Black Mustard Seeds
    0.5 Fennel Seeds
    1 Tsp Mild Madras Curry Powder
    0.5 Tsp Coriander Powder
    Large Pinch Curry Leaves
    1 Tsp Salt
    0.5 Tsp Sugar
    2 Large Cloves Garlic Finely sliced
    1 Tbsp Tomato Puree (mixed withe water)
    (Some water on the side just in case of burning)
    Decoration
    1 Very mild Red Chilli
    Chopped fresh Coriander

    When I'm cooking Al's recipes, I do all the prep with the spices etc. and then follow him through on my laptop as he cooks bit by bit.
    This went like clockwork until I got to the taste test. Something wrong I thought...It doesn't taste right.
    I check my worksurface, all the spices have gone....and.... Oh dear...The salt and sugar are still sitting on the table!!
    There's no sign of Al putting them in on the video either.
    So I put a drop of water into the mix and stirred it in, then did another taste test.... FABULOUIS!!
    It was a good job I did this because next week I'm cooking this, and two other curries for a dinner at our place for four, so I'll make sure I get the sugar and salt in at an early stage.

    tried this with some fresh curry leaf, a little less seasoning over all (and presumed the un-named ground spice in the middle is 50/50 cuming/corriander. Added around 1.5 chef spoon (4-5tbsp) of base gravy to help the consistency. Also added a little fresh tomato. It tasted very good and well balanced. Little wedge of lemon on the side when serving. cheers Al

    Hi Al. Love all your recipes. You have some great tips. If I may give you a tip for the Bombay Potatoes I used Asda baby potatoes, it was a pain peeling them all but with your recipe they stayed whole and didn't fall apart. Well worth the effort. Thanks for your videos.

    Only problem I had was the mustard seeds popped all over the kitchen - was my oil too hot ?

    Don't know why i waited so long to do these. So simple and absolutely delicious. Our local Asian store stocked cyprus potatoes - ideal. What was the powder in the centre of the plate of spices? It didn't mention that during the intro. I assumed garam masala, which worked well anyway.

      New potatoes are an excellent choice for this recipe. They taste 10% better when left for a few hours too. The spices really get into the spuds!

    Going to try the Bombay potatoes (will have to search for correct potatoes as live in Canaries now DID live pretty close to Penge. Beckenham. My husband was Police officer at Penge Police station. Pheww small world). Absolutely love your cooking videos

    Al mentions two types of Potatoes, but I was unable to find either of them, even in Waitrose.
    However, I have found that "salad potatoes" work very well. They are the small potatoes you can get in a plastic bag from Aldi.
    Put them (WHOLE) with skins on, into boiling water and cook them for 20 minutes. Strain, then add cold water to stop them cooking from residual heat. Once cool, cut them up into chunks and put them to one side. Then cook them as Al does .

    Great recipes. Just moved to Phillipines and are struggling to find all the ingredients we didn't send in our cargo boxes. Made up yesterday when we found fresh coriander in Robinsons Supermarket in Angeles.
