- I don't know about you but I love potatoes. Seriously. My carb of choice. Bombay aloo is India's answer to French fries and gravy. Think about it. Fried potatoes wrapped up in a lush, spicy curry gravy. How can you not want that?

I love Bombay Aloo! This recipe looks amazing! I am of Indian descent but I find Indian cuisine quite difficult. Even my late father who was a classically trained chef found it difficult to master; especially when cooking for vegetarians. As a child, I always assumed that you just needed to double the amount of spices if cooking for twice the number of people for example but it's not that simple.
I look forward to trying out this recipe as it looks so good!

Nice recipe. Can easily add things to this that's what's great about bir cooking. I always add some panch phoron to the oil with the onions. And a touch of good quality mango chutney at the end of cooking. Nice one

A tablespoon of ghee at the end of cooking will give a true Indian restaurant taste.

Not sure why I keep watching your videos when I'm trying to lose weight, guess I like torturing myself lol. I think I'll have to have a go at these when I next have a cheat day, I love bombay potatoes, and your other recipes I have tried have all been fantastic.

I live at a area called the Glebe in Birmingham UK so I will follow you for more recipes in the future by the way i use Kashmir Chilli powder in most of my curry dishes especially when I cook for my grand kids it's not to firey

He’s right, you can’t skimp on the oil…. I use ghee to make it more “healthy”.

What’s a waxy potatoes variety name to choose?
I don't know where you are. Waxy potatoes are new potatoes where I am. They are also called grelots here. Fingerlings work as well. Not a floury potato. Does that help in any way?
