I used this recipe last weekend. It is fool proof. Very nice dough to work with. Used plain regular flour and my loaf turned out so soft and tasty. Froze some, made french toast with some and ate some with meat curry. Highly recommend!
To allow the dough get smoothened easier along the kneading process. If we use warm water, the yeast will be actively release carbon dioxide gas, interrupting the gluten forming process and difficult to achieve smooth dough
