    • 1 large red onion, diced
    • 1 red bell pepper, chopped
    • 1 tsp salt
    • 1 tsp pepper
    • 1 tsp oregano
    • 1 tsp basil
    • 1 tsp chili
    • 500g (1.1 lbs) beef mince
    • 1 can diced tomatoes
    • 1 cup tomato passata
    • 1 can lentils, drained and rinsed
    • 2 cups stock (beef or vegetable)
    • 3 cups kale, chopped
    • Bread, for serving
    🍽️ Instructions:
    1. Sauté the Aromatics:
    In a large pot, heat some olive oil over medium heat. Add the diced red onion and chopped red bell pepper. Season with 1 tsp salt, 1 tsp pepper, 1 tsp oregano, 1 tsp basil, and 1 tsp chili. Sauté the mixture for about 5-7 minutes, until the vegetables are soft and fragrant.
    2. Brown the Beef:
    Add the 500g (1.1 lbs) beef mince to the pot with the sautéed vegetables. Cook, breaking up the mince with a wooden spoon, until the beef is browned and fully cooked through.
    3. Add Tomatoes and Lentils:
    Stir in the can of diced tomatoes and 1 cup of tomato passata, mixing everything together. Add the drained and rinsed lentils to the pot, stirring to combine.
    4. Simmer the Soup:
    Pour in 2 cups of stock (beef or vegetable) and bring the soup to a gentle simmer. Cover the pot and let it simmer for about 15 minutes, allowing all the flavors to meld together.
    5. Add the Kale:
    Stir in 3 cups of chopped kale and let it cook for an additional 5 minutes, until the kale is wilted and tender.
    6. Serve:
    Ladle the Tuscan-Style Beef & Lentil Soup into bowls and serve with crusty bread on the side for dipping.
    Tips:
    • Adjust the seasoning to taste with extra salt, pepper, or chili for more heat.
