For the Meatballs:
• 1 kg (2.2 lbs) beef mince
• 1 egg
• 1 tsp salt
• 1 tsp pepper
• 4 garlic cloves, minced
• 1 onion, minced
• 1/3 cup parsley, chopped
• 1/3 cup parmesan cheese, grated
• 1/2 cup bread crumbs
• 1/2 cup passata
For the Soup:
• 3 carrots, chopped
• 1 onion, diced
• 4 celery stalks, chopped
• 4 garlic cloves, minced
• 1 tsp salt
• 1 tsp pepper
• 1 tsp chili flakes
• 2 Tbsp Italian mixed herbs
• 2 cans diced tomatoes
• 2 cups stock
• 1 cup passata
• 2 cups fresh spinach, chopped
• 1 cup ditalini pasta
🍽️ Instructions:
Step 1: Prepare the Meatballs
1. In a large bowl, combine the beef mince, egg, salt, pepper, minced garlic, minced onion, parsley, parmesan cheese, bread crumbs, and passata.
2. Mix everything well until combined. Roll into small meatballs.
3. Heat olive oil in a skillet and cook the meatballs until browned on all sides. Set aside.
Step 2: Sauté the Vegetables
1. In a large pot, heat olive oil over medium heat.
2. Add the carrots, onion, celery, and garlic. Sauté until softened and fragrant.
Step 3: Build the Soup
1. Season the vegetables with salt, pepper, chili flakes, and Italian mixed herbs.
2. Add the diced tomatoes, stock, and passata. Stir well and bring to a gentle simmer.
Step 4: Add Meatballs and Pasta
1. Stir in the fresh spinach
2. Add the cooked meatballs to the soup along with the ditalini pasta.
3. Simmer for 10 minutes, stirring occasionally, until the pasta is tender.
Step 5: Serve
1. Serve the soup hot with crusty bread on the side.
