  • This video shows you all the ingredients and steps you need to make a traditional Senegalese main dish.
    Ingredients:
    Olive Oil
    Meat of your choice
    Salt
    Nokoss
    Ndey Tida’s Spice Mix
    Water (4 cups)
    Bay Leaves
    Rice (2 cups)
    Steps:
Olive oil in a cooking pot.
    Place meat into oil.
Salt to your preference and flip the meat until all pieces show bronzing.
Add pre-prepared nokoss. (Please see video for nokoss)
Add Ndey Tida’s Spice Mix and stir.
Add about four cups of water and stir.
Add bay leaves, bring to a boil, and cover.
Add about two cups of pre-washed rice (Please wash the rice two hours making sure that no water is left in the pre-washed rice).
    Add mixed vegetables and stir.
Partially cover the pot and let simmer at low heat for an hour or an hour and half, halfway through before adding the rice.
After adding the rice, cover the pot completely and lower the heat to the minimum and let it cook for thirty minutes while turning it occasionally.
    Bon Appétit!

I remember seeing this video a couple years ago and couldn’t find it again. I’m so happy to have come across it again now while searching Senegalese Jollof!!! This is the only video where the rice looks exactly like the Jollof I used to get from a Senegalese restaurant in my old neighborhood . I just KNOW this tastes soooooo good ugh 😍 I’m saving this video right now!

The spice mix is my homemade spice mix. You could use grammasala. It is Indian spice mix but very spicy hot. To reduce the heat you could use less grammasala and more coriander powder. The secret is to let the meat fry until it is golden brown and you add the Nokoss and the spice and let it dorèe then add the water you need. When it boils for five minutes high heat then reduce the heat to low and let it boil for an hour before you add the rice that has been washed and drained for an hour. Thank you for watching the videos and for your comment💕It is highly appreciated 💕
