Soy Braised Potatoes (Gamja Jorim, 감자조림) -- Quick, easy and delicious!

  • Gamja jorim is a popular Korean side dish made with potatoes and a few basic ingredients. The potato cubes are braised in a slightly sweet, soy sauce-based sauce. You can make this recipe without a trip to a Korean market.

    ►Ingredients:
    1.5 pounds potatoes (about 3 medium size)
    1 carrot (about 3 ounces) See note 1
    2 to 3 green chili peppers (or 1/2 green bell pepper)
    1/4 medium onion
    1 tablespoon cooking oil
    Braising liquid:
    3/4 cup water
    3 tablespoons soy sauce (or 2 T soy sauce and 1 T gochujang)
    1 tablespoon sugar
    1 tablespoon rice wine (or mirin/mirim or other cooking wine)
    1 tablespoon corn syrup (or oilgodang) or use more sugar
    1 teaspoon minced garlic
    pinch black pepper
    1 teaspoon sesame oil
    1/2 teaspoon roasted sesame seeds

    I just made this dish using your recipe for tonights dinner along with a few other banchan from your site!
    I've been referring to Korean Bapsang for a while now as I've been missing my Mum's cooking after moving out. I find your recipes are more similar in taste profile to what I'm used to at home and it helps me to elevate my korean cooking, Thank you so much!

    This is my favorite recipe and I've made versions of it a number of times. Each time experimenting with slightly different ingredients or mixtures. My favorite supporting vegetable is to add carrots later in the cooking for a nice texture contrast with the potatoes, plus that touch of sweetness.
