Thank you very much. For you truly did a very proffesional job. BTW, Taiwanese vegetarian cuisine has a very high level n common. Recommend you to make a unit base on this theme.
That hotpot is the traditional shaped pot, and not the modern hotpot shape. The center column is to make sure hot air could go to heat up all the soup evenly and easy to add coals. The different deserts you tried are all my favorites. I particularly like the steamed red bean rice cake. Taiwan's fresh fruits ate also the best. Their grape fruit (Wen Dan 文旦) is the kind better than other places. You should try it during the Autumn season (or the end of Summer) ...I think. The ground pork and rice dish is my simple go to meal. Last year I went back to Taipei and was at the tail end of a flu. I have no appetite. I can only hope down that dish and some fish ball soup! The fish you said to be like eel is called "Shan Yu" (鳝鱼). You can find them in Shanghainess Chinese restaurants. Taiwanese food was greatly influenced by the Shanghainess food because a lot of people from that region cane to Taiwan after 1950. I really think you have the best travel videos and food videos. You really do your homework. Great job!

I’ve watched all the food videos you took in Taiwan, but I’m not sure if i saw you try 熱炒...? That’s where they sell many kinds of dishes and drinks/beer. All the dishes start from NTD$100. For me it’s somewhere I would definitely recommend to foreigners.

Good question! I actually don't think I've ever had Taiwanese food in Canada, though, so I don't have an answer.
there is this Japanese restaurant chain - Ootoya, we had a lunch box from there and it was fantastic :)
