In my country, home alcohol brewing was outlawed in colonial times so that sugar-cane land owners could make commercial rum. They outlawed ganja too back then. But the art and culture of home winemaking was repressed. Only illegal dealers would make it. And people still bought illegally made alcohol for weddings and special occasions. There is no strict rules on home brewing in some part of Northeast region of India. Tribals are still brewing and selling homemade liquor in open market. That's their livelihood also. The Wine making is an art and science. You can make Wine from anything, yes I meant anything. That's science. You know the story of Ayurvedic Arishtam in India. That is called pure Herbal Wine. The alcoholic percentage you get in these Arishtams Approximately 4 to 7 percentage. But this consider as medicine and fruit wines consider as alcoholic beverages.........

It took a few more days to become yeasty even though it is summer here. We have imported grapes here, and though it did have seeds in them, I am not sure about the additives in them. But once it started, it became bubbly fast. My first pineapple fermentation is bubbling like it should. I am so, so grateful to you Mataji.

No need to add yeasts, if you are making wine from fresh grapes (seeded black/blue grapes). Or you can use 1cup homemade wine yeast for 20 litre fresh juice. Approximately 25 ml for 1 litre juice.

How do you know that the yeast is developing. I made this and stirred it 6 hours later but there are no bubbles etc. Does this mean that it is not working? When do bubbles appear?

Yes, you have to infuse the sugar step by step. Make sugar syrup with 4 - 5 litre water+ 1 kg sugar. Let it cool to room temperature and add 1 cup Yeasts strain.

You can make Red wine from commercial juice. But it should be free from preservatives, because preservatives kills Yeasts we are adding into it. That's why, if you get 100% organic natural juice then you can make wine from that juice.

Don't be confused, smell of all strong Yeasts are same. but there are verities in Yeasts family. The bakers yeasts are mixed verity of yeasts, and its making from potato or wheat flower, that is why it is very cheap. In the case of Wine making or Brewing, the Yeasts are different. specially Cultivated and separated from others. Saccharomyces Bayanus is the popular and best Wine yeast family in this category. Saccharomyces Cerevisiae is the one is using for Wine (Pure) making and Baking(Poor). there are lots more verities available. Google it
Beer is another category. It needs brewers yeast that can digest the grain sugars. Wine yeasts are more efficient in eating sucrose, glucose, maltose and dextrose sugars. You won't be getting enough alcohol by using wine yeast on grains.

If you are going to make wine with seeded grapes then no need to add wild yeast. yeast is itself in seeded grapes, especially in black grapes, and no need to add sugar also. sugar is adding for increasing the alcohol percentage, without adding sugar you get less alcoholic sweet wine. follow the instructions given on our Red Wine making video.
I would recommend making a starter with few grapes. Pluck 4-5 grapes with maximum white powder coating. You can add a chopped apple too. The fruits you use for making yeast should be unwashed. The grapes that you want to make wine should be thoroughly cleaned with hot and cold water so as to wash off dust and pesticides. If your starter comes out well, pitch it in your crushed grapes. Don't add water or sugar. That's how Italian wine is made. Washing part is necessary to minimize the effect of pesticide and germs in indian market fruits.

@@j_notario1117 to ascertain the safety of consumption, grapes must be washed and use activated commercial yeast. Or you can take few unwashed grapes and make yeast culture. Then wash the rest of the grapes using hot and cold water. Use the yeast starter after this. That way pesticide level will be very low though it won't be 100% eliminated. But I would recommend sanitizing everything and using commercial yeast separately. You can extract yeast from apples too with great results.

But you should calculate the percentage which Yeasts can consume without any hurdles. Try to ferment very less percentage and further add more.
What you want to do with the sugar wash. Wine or distilled alcohol? With our yeast strains you get 14 - 18% ABV. That is Dry Wine. There after you can distill and separate alcohol. See 10 or 20 grapes can't ferment 20 litres fruit juice, but this 1 cup yeast strains can ferment 20 litres of fruit juice within 7 to 10 days as per your room temperature. You can try with sweet lime, but I am not sure, just try once.
You can use a bit of lemon juice. It also works nicely but don't overdo it. Your wine would start tasting like vinegar. But definitely use a full lemon for a gallon of wine (4 litres). Use whatever you have at your disposal. I used apple to make yeast, added raisins for nutrient and then grapes for adding more variety of yeasts. The different strains of yeasts fight among themselves and the strongest among them all will colonize your sample. It's much more stronger and makes better wine than your normal bread yeast.
@trixiek942 Yes, you need to use water, put crushed grapes in it, apple cut into small pieces and a dash of lemon juice. Put two teaspoons of sugar and shake well. It may take 4-5 days for the wild yeast to fully become active. First day you wont notice much activity. From second day onwards you will see little bubbling. Shaking the bottle ensures dissolved carbon dioxide to escape and small amount of oxygen enters the must. Also if you are making 5 litres of wine, the starter quantity should be around 500ml, just 10% of the total. Below that quantity the fermentation would take longer.
@trixiek942 Dont use too much of raisins, just 25 of them, otherwise your wine may smell like oxidized grapes. You can use the starter for any kind of wine because grapes remain neutral for other fruits. Also try pineapple wine with this formula.
@trixiek942 I would recommend to make 8% ABV wine because high alcohol subdues the fruity aroma. Fruit wines need to have less alcohol. For grapes you can go for 12-14% for best results. Pls dont use vinegar to wash the fruits intended to make wine. Use sodium metabisulphite to sterilize the fruits (killing the bugs and wild yeast).

@@Dave_en I think you are from northeast India. In northeast India as per my knowledge, black vinegar made from grains (rice) not from fruits. But they also know how to make traditional rice beer, rice wine and distilled rice liquor. For making vinegar, fermentation process is same, should convert sugar content to ethanol first thereafter it converts to vinegar. It's natural process. And you know about it.
@@FoodiesWok I was talking about western UP village people. I was explaining them winemaking procedure. They listened to me and told that it's similar to how they make vinegar. They fill earthen pot with sugarcane juice and keep an iron nail with it. Then cover the pot and keep it in the sun for 3 months. Slowly it turns into vinegar by fermentation process (alcoholic fermentation being intermediate). I tasted their sample of vinegar. It was undistilled crude form of vinegar which gave me hyperacidity instantly.
Paaji, airlock can be made at home if you want. Online ones cost minimum 300 rupees for the small piece of cheap plastic. Just buy a sample collection plastic bottle from nearby medical stores, a 5ml syringe with needle removed and a dropper. Just assemble it yourself and you will be spending just 20 rupees or even less. I would recommend using plastic wrap sheet with rubber band till then. Airlock tool is not even a necessity.

@@FoodiesWok If the sugar concentration is too high, water will diffuse out of the cells and the cells will be dehydrated. I believe that is how sugar is used as a preservative. Similar to using salt as a preservative.

It's not at all necessary to use black grapes only. It depends on the colour of wine you want to produce. If your juice is already dark coloured, use any grape. For lighter coloured wines, you have to use white grapes only. You can use apples too for the yeast cultivation.

So if you want to make some Good Wine, except some fruit like Grapes, Pineapple, Blackberry etc, You need to have a wine yeast . Wine Yeast can convert 15% to 20%
Not sure, because wine yeast we are made is not free from moisture, it's wine yeast strains. That means you can start a fresh fermentation with this yeast. In your case fermentation is on half the way, still you can try with one cup of your beetroot wine batch add one tsp wine yeast, one tsp white sugar and check what happens. If succeeded you can add in your entire batch.

@@FoodiesWok I achieved anywhere between 8-14% ABV using bread yeast depending on batch of bread yeast but I can't tolerate it's bad flavour in my wine. 12% ABV is very easy to achieve using bread yeast and natural nutrients.

Brewing beer at home is little dangerous. When distilling beer, a toxic byproduct is called methanol also mix with beer. If you don't know to eliminate methanol properly it will be a big disaster. Methanol is a highly toxic poison. That's why whoever trying to brew beer at home should be very careful.
Hi. Infact all alcohol contains methanol, except alcohol made from pure white cane sugar(sugar wash). Fructose which is found in fruit ie. wine, has a higher percentage of methanol than grain ie. beer. Don't believe the myth about methanol its only toxic if you drink it in its pure state. All beers and wine have it. It's just spread/diluted throughout the beverage. Only distallation can get rid of it. 🥂

But the studies says natural methanol quantity in wine is very less that is not harmful for human body. You tell them that you need to drink 10 litres of reasonably strong wine, that too within an hour to get the effects of methanol poisoning. Rest, ethanol is also poisonous when taken in large quantity. If it gives you intoxication, then it's harming your liver. Intoxication occurs when the liver can't process the alcohol beyond its capacity. Else ethanol can easily be digested and turned into energy with right quantity just like other foods and beverages.

Yes you can wash the grapes. Using grapes as it is for a big reason. White powder visible on Grape surface is Yeasts. Once you rinsed the grapes most of the Yeasts will be washed out. Then also you can cultivate Yeasts from rinsed grapes.

If properly made, you get 12-14% alcohol. Half litre of wine can give you nice high state. 3 glasses can make you full blown drunk state. Achieving 20% ABV is too far fetched. Even if you get 16-17% ABV, consider yourself lucky. Also while you aim for higher ABV your wine becomes undrinkable due to increase in higher alcohol like butanol, propanol which is similar to sanitizer liquid. 12-14% is a sweet spot. 8-10% ABV wines are really tasty if you ignore the alcohol part.

Lemon is more acidic than orange. It can be stop the cultivation on half the way. Different types of oranges🍊 available in market. Means, imported from different countries. If not available you can try sweet lemon.

@@samsung9479 there is no fixed rule in ferment duration. As soon as it stops bubbling, you can strain and pour into secondary. After this, there should not be any oxygen exposure to wine. You can also store in bottles and just let the pressure out once in a week. Keep it in the bottle till it becomes crystal clear.

In India all types of brewing is illegal if it made without proper licence from authority. But they purposely ignored on homemade Wine making for personal use. There is no strict rules on home brewing in some part of Northeast region of India. Tribals are still brewing and selling homemade liquor in open market. That's their livelihood also.

It took a few more days to become yeasty even though it is summer here. We have imported grapes here, and though it did have seeds in them, I am not sure about the additives in them. But once it started, it became bubbly fast. My first pineapple fermentation is bubbling like it should. I am so, so grateful to you Mataji.

No need to add yeasts, if you are making wine from fresh grapes (seeded black/blue grapes).
Or you can use 1cup homemade wine yeast for 20 litre fresh juice.
Approximately 25 ml for 1 litre juice.
In that case, you can use if 100% juice is available without preservatives.
You can make wine from any fruit🍍🍎🍓🍇 If you have wine yeasts.
Now imported grapes are available everywhere (Red in colour with seeds) and you can make yeasts from that grapes. Follow the instructions carefully.

Actually you don't want to add extra yeasts for red wine fermentation if you are using fresh Grapes. In the case of market bought Grape Juice, please assure the juice is preservative free. Otherwise the fermentation may be won't start.
Now come to homemade Wine Yeasts Strains. You should keep an on your juice mixture. Once the Yeasts is fully cultured, Yeasts will come up and cover with full of bubbles.... This is the time to strain the Yeasts mixture and use Or keep it in refrigerator.
How do you know that the yeast is developing. I made this and stirred it 6 hours later but there are no bubbles etc. Does this mean that it is not working? When do bubbles appear?

Even the powder coat is not on that You can a try from that, because Grapes and Apples has the strong Yeasts on their skin. You can make from Apples also.

Maximum 3 days. If you want to keep this Yeast strains more than 3 days you should feed them. Feed half cup fresh grape juice and keep it in refrigerator. But keep in mind you should not close the lid tightly. Or just loose and tight the lid everyday.

No, you must use clean hand, steel or wooden masher for just splitting the grapes. If you use food processor it will grind grape skin also, it will spoil your wine taste.

No, you can't use lemon juice, Orange juice is natural energizer for Yeasts. if you not getting fresh oranges, do like this, take one teaspoon dry yeasts in a bowl and add to 2 tablespoons of boiling water. yeasts dies in boiling water. let it cool to room temperature. discard the water after yeasts settling at bottom of the bowl. add this died yeast cells into grape mixture and follow the instructions as in video.

You can make Red wine from commercial juice. But it should be free from preservatives, because preservatives kills Yeasts we are adding into it. That's why, if you get 100% organic natural juice then you can make wine from that juice.

Don't be confused, smell of all strong Yeasts are same. but there are verities in Yeasts family. The bakers yeasts are mixed verity of yeasts, and its making from potato or wheat flower, that is why it is very cheap. In the case of Wine making or Brewing, the Yeasts are different. specially Cultivated and separated from others. Saccharomyces Bayanus is the popular and best Wine yeast family in this category. Saccharomyces Cerevisiae is the one is using for Wine (Pure) making and Baking(Poor). there are lots more verities available. Google it

We won't recommend balloon as a Air-lock system, because - reason no.1, there is chance to fall back the balloon powder into the wine and the Wine will be contaminated. Reason no.2, Air-lock system must work effectively. When the fermentation process goes slow or stopped, if not monitored, there is a chance to the oxygen will go inside the fermentation vessel and spoil the entire batch of the wine.
Advantage of the good Air-lock system.
It will never allow the oxygen get in the secondary fermentation process. But allowed CO2 get exhausted.
If it's not available, you can make a homemade Air-lock system. Shown as in our Pomegranate Wine making video.

If you are going to make wine with seeded grapes then no need to add wild yeast. yeast is itself in seeded grapes, especially in black grapes, and no need to add sugar also. sugar is adding for increasing the alcohol percentage, without adding sugar you get less alcoholic sweet wine. follow the instructions given on our Red Wine making video.
I would recommend making a starter with few grapes. Pluck 4-5 grapes with maximum white powder coating.
You can add a chopped apple too. The fruits you use for making yeast should be unwashed.
The grapes that you want to make wine should be thoroughly cleaned with hot and cold water so as to wash off dust and pesticides.
If your starter comes out well, pitch it in your crushed grapes.
Don't add water or sugar.
That's how Italian wine is made.
Washing part is necessary to minimize the effect of pesticide and germs in indian market fruits.

@@j_notario1117 to ascertain the safety of consumption, grapes must be washed and use activated commercial yeast.
Or you can take few unwashed grapes and make yeast culture. Then wash the rest of the grapes using hot and cold water. Use the yeast starter after this.
That way pesticide level will be very low though it won't be 100% eliminated.
But I would recommend sanitizing everything and using commercial yeast separately.
You can extract yeast from apples too with great results.

Normally Yeasts eats only sugar contained in fruits, not entire fruit.
You can use this yeast strains for fermenting sugar water. But you should calculate the percentage which Yeasts can consume without any hurdles. Try to ferment very less percentage and further add more.

You can wash if you want, our intention is what how we can capture the all wild Yeasts are presence on the fruit and multiply their family.
If Yeasts are strong they never allow to grow other bacteria on it. And when we are start cultivating Yeasts alcohol is produced as byproduct. Bacteria can never survive in alcohol except Acetobator bacteria as in inactive form. Once alcohol start evaporating the Acetobator start their work and converting wine into vinegar.
But we will stop their work in midway once enough Yeasts are produced. It means it's very safe to use as wine fermentation starter Yeast strains

Orange juice is a yeast energiser, it's make Yeast very strong. See 10 or 20 grapes can't ferment 20 litres fruit juice, but this 1 cup yeast strains can ferment 20 litres of fruit juice within 7 to 10 days as per your room temperature.
You can try with sweet lime, but I am not sure, just try once.
You can use a bit of lemon juice. It also works nicely but don't overdo it. Your wine would start tasting like vinegar.
But definitely use a full lemon for a gallon of wine (4 litres).
Use whatever you have at your disposal.
I used apple to make yeast, added raisins for nutrient and then grapes for adding more variety of yeasts. The different strains of yeasts fight among themselves and the strongest among them all will colonize your sample. It's much more stronger and makes better wine than your normal bread yeast.
@trixiek942 Yes, you need to use water, put crushed grapes in it, apple cut into small pieces and a dash of lemon juice. Put two teaspoons of sugar and shake well. It may take 4-5 days for the wild yeast to fully become active.
First day you wont notice much activity. From second day onwards you will see little bubbling. Shaking the bottle ensures dissolved carbon dioxide to escape and small amount of oxygen enters the must.
Also if you are making 5 litres of wine, the starter quantity should be around 500ml, just 10% of the total. Below that quantity the fermentation would take longer.
@trixiek942 Dont use too much of raisins, just 25 of them, otherwise your wine may smell like oxidized grapes. You can use the starter for any kind of wine because grapes remain neutral for other fruits. Also try pineapple wine with this formula.
@trixiek942 I would recommend to make 8% ABV wine because high alcohol subdues the fruity aroma. Fruit wines need to have less alcohol. For grapes you can go for 12-14% for best results.
Pls dont use vinegar to wash the fruits intended to make wine. Use sodium metabisulphite to sterilize the fruits (killing the bugs and wild yeast).

@@Dave_en I think you are from northeast India. In northeast India as per my knowledge, black vinegar made from grains (rice) not from fruits.
But they also know how to make traditional rice beer, rice wine and distilled rice liquor.
For making vinegar, fermentation process is same, should convert sugar content to ethanol first thereafter it converts to vinegar. It's natural process.

@@FoodiesWok I was talking about western UP village people. I was explaining them winemaking procedure. They listened to me and told that it's similar to how they make vinegar.
They fill earthen pot with sugarcane juice and keep an iron nail with it. Then cover the pot and keep it in the sun for 3 months. Slowly it turns into vinegar by fermentation process (alcoholic fermentation being intermediate).
I tasted their sample of vinegar. It was undistilled crude form of vinegar which gave me hyperacidity instantly.

Just buy a baloon if you cannot get an airlock. Once the baloon starts inflating, pierce in a few times with a needle.
Paaji, airlock can be made at home if you want. Online ones cost minimum 300 rupees for the small piece of cheap plastic. Just buy a sample collection plastic bottle from nearby medical stores, a 5ml syringe with needle removed and a dropper.
Just assemble it yourself and you will be spending just 20 rupees or even less.
I would recommend using plastic wrap sheet with rubber band till then. Airlock tool is not even a necessity.

Wild yeasts contains on grape skin surface and skin. The white powdery sheen visible on grape skin is wild yeasts.
That's why you have to use grapes along with that powdery skin. When you wash grapes this powder will washed out and yeast strength will be very less.

Sugar never kill yeasts. If sugar is more than yeasts can consume and there is no energizer for multiplying yeasts family, then it happens. After all we just showed how our yeast culture working on fruit juice. For information please watch other wine making videos.
@@FoodiesWok If the sugar concentration is too high, water will diffuse out of the cells and the cells will be dehydrated. I believe that is how sugar is used as a preservative. Similar to using salt as a preservative.

It's not at all necessary to use black grapes only. It depends on the colour of wine you want to produce. If your juice is already dark coloured, use any grape.
For lighter coloured wines, you have to use white grapes only.
You can use apples too for the yeast cultivation.

Not sure, because wine yeast we are made is not free from moisture, it's wine yeast strains. That means you can start a fresh fermentation with this yeast. In your case fermentation is on half the way, still you can try with one cup of your beetroot wine batch add one tsp wine yeast, one tsp white sugar and check what happens. If succeeded you can add in your entire batch.

Never use bread yeast for wine brewing...its not meant for brewing.

I think we can't make beer with our method of yeast strains, because this strain contains moisture and moisture can spoil beer making process.
Brewing beer at home is little dangerous.
When distilling beer, a toxic byproduct is called methanol also mix with beer. If you don't know to eliminate methanol properly it will be a big disaster. Methanol is a highly toxic poison.
That's why whoever trying to brew beer at home should be very careful.
Hi. Infact all alcohol contains methanol, except alcohol made from pure white cane sugar(sugar wash). Fructose which is found in fruit ie. wine, has a higher percentage of methanol than grain ie. beer. Don't believe the myth about methanol its only toxic if you drink it in its pure state. All beers and wine have it. It's just spread/diluted throughout the beverage. Only distallation can get rid of it. 🥂

You are right, methanol is produced in the wine making process. But the studies says natural methanol quantity in wine is very less that is not harmful for human body. But it will be little more in commercial wine, because they are adding enzymes in wine making process to clarify it to get a clear and smooth feeling. But both are not harmful for human body when using wine in moderate quantity.

You tell them that you need to drink 10 litres of reasonably strong wine, that too within an hour to get the effects of methanol poisoning.
Rest, ethanol is also poisonous when taken in large quantity.
If it gives you intoxication, then it's harming your liver. Intoxication occurs when the liver can't process the alcohol beyond its capacity. Else ethanol can easily be digested and turned into energy with right quantity just like other foods and beverages.

Yes you can wash the grapes. Using grapes as it is for a big reason. White powder visible on Grape surface is Yeasts. Once you rinsed the grapes most of the Yeasts will be washed out. Then also you can cultivate Yeasts from rinsed grapes.

You get 10% - 20% alcohol in your wine.
All depends on how you made it.
If properly made, you get 12-14% alcohol. Half litre of wine can give you nice high state. 3 glasses can make you full blown drunk state.
Achieving 20% ABV is too far fetched. Even if you get 16-17% ABV, consider yourself lucky. Also while you aim for higher ABV your wine becomes undrinkable due to increase in higher alcohol like butanol, propanol which is similar to sanitizer liquid. 12-14% is a sweet spot. 8-10% ABV wines are really tasty if you ignore the alcohol part.

@@samsung9479 there is no fixed rule in ferment duration. As soon as it stops bubbling, you can strain and pour into secondary. After this, there should not be any oxygen exposure to wine. You can also store in bottles and just let the pressure out once in a week. Keep it in the bottle till it becomes crystal clear.
