Very nice Cyrus. The old man that showed me how to make moonshine always told me to take about a handful of corn or 2 row barley and soak it in some water, lay it out in direct sunlight on some kind of cloth and allow it to sprout. Once the sprouts were about 2 to 3 inches long, you grounded all of it up into a powder and you had 100% natural yeast.

That makes malt. You need malt to convert the mash. That's an old technique. Time tested.

If you don’t have a berry patch handy, you can grow a yeast starter with just flour and water. After about five or six feedings with more flour and water you have a sourdough starter and it makes some nice spirit.
So you have gathered your own yeast?

You can make it off the land and I know a few things to use but the one that turns out relly good is Burch bark.

Overwhelming response for it. I'm planning to do the series with a wild pawpaw Brandy. I just have to wait on the pawpaw's. As far as the end result of the wild berry yeast, it was great I used the wild yeast to make this mountain brandy. th-cam.com/video/b4Z4yZlTklE/w-d-xo.html

Different plants will yield different varieties of yeast. I tried this few years ago with a bunch of different berries/flowers etc. and surprisingly rhubarb was the best one. It definitely smelled like pure yeast, the exact same you'd get from a storebought package. I'm guessing the acidity also has to do with it since yeast likes acidic environments but the unwanted bacteria and mould can't survive those conditions that well.
I would love to see a series about making whiskey in the woods, with only things you find in the woods.
Definitely want to see a full series from start to finish on this and hear your thoughts on the taste difference using the wild yeast

I have been confined to a rehabilitation center for the past five (5) years, where ethanol is considered "contraband." I had been making "Prison Wine" (HOOCH) with grape juice, sugar and yeast, but I moved to a new hospital and THE SOCIAL SECURITY ADMINISTRATION is still sending my monthly check to my old residence.
Of course, they will NOT answer the telephone. Instead, they just send thousands of dollars to the wrong business month after month. Our tax dollars at work! 🤪
So, I have not even been able to afford to buy a packet of yeast since May.
In desperation, I taped a cotton ball to the air conditioning vent, but this did not work. There are NO fruits or berries in here.😒
When I am liberated from this facility, I plan on getting a job with the COOK COUNTY FOREST PRESERVE DISTRICT. As I will be out in "GOD's Creation" everyday, I would LOVE a video on finding ingredients for liquor in nature.

Man, that sounds pretty tough, brother. The stuff you can find in nature is mostly fruits and typically seasonal for your region, but man it can be very satisfying.

Last week I made 2- 6 gallon mashes.
I set them aside to cool and wait to pitch yeast.
Lo and behold the next day they had started fermentation.🤷♂️
All I can think of is that the pollen is so bad up here that wild yeast rode in on all the pollen.

Just started making my own yeast I pulled some cap and little flour and sugar and 1 small potatoe shaved and cooked so far it looks good and smells great and I am putting in the frig at night and out during the day.. just trail and error at the moment set it up for starter for sour dough bread . So can keep it for a long time and just add back as I use it.
I'm leaving it in the frig for 3 days and let it slow down so it builds up instead of running out of yeast .so I started with 1/2 gallon and thinking about splitting it into 2 half gallon anyone else has positive or negative input or suggestions. It is my first attempt to build up a yeast starter for multiple options

I would like to see ways to make a mash without any supplies from town. The only fruit we have here in the Texas Panhandle is Sand Plums but the "frosting" on the plums could be yeast. Thank you for making these videos!

I use wild grapes that grow all over my farm. last year I made grape wine. looking forward to making oat whiskey with the wild grape yeast.
