Great decision. You can do all new plumbing, electrical, add the extension and do every exactly as you like. Check if you can get drywall with insulation attached to it. It may be worth installing to keep the house cooler or warmer. Since you are knocking holes in walls, add another one and install a log burner for winter or heated floors.
I wonder if you could enlarge the current entrance opening and close in your patio area to gain an additional living room or office space + foyer with storage. Just an idea thou I’m sure you have plenty of your own. Loving your updates and your story and wish you all the best with renos over the coming days / weeks. You’ve got this - after France you are pros!👏

Don’t worry, it always looks worse before it looks better! It’ll turn out great! :) One side-note - to be safe, if the black on the floor from under the tiles is black mastic (i.e. cutback adhesive for tiles), you may want to test it for asbestos before you disturb it. Asbestos adhesive and floor tiles were common from 1920-1960 and still used up to 1980.
What made you decide to gut it?? Was it just quickly becoming something that was already more than headed in the direction of complete annihilation?? 😂 Regardless, I hope it goes well, and that you’re both thrilled with the end result - all that work has to be worth at least that much joy in the end!!! 😊
