    Of all dried beans, garbanzos are my favorite. I do lots of Spanish and Mediterranean dishes, and garbanzos are featured often. I also LOVE their texture and subtle flavor. Thanks for posting this video!

      @@TheKneadyHomesteader Oh yeah..about a month ago the list was long and Amazon gave me credit for a pack I had just bought. It's so easy to make..blew my mind and WAY cheaper! All you need is 1 cup hulled sesame seeds, toast them lightly on the stove top and throw them in the food processor to cool for about 10 min then process until they are crumbly and then add grape seed oil, canola or vegetable oil..2-3 tbsp.....process until smooth. Stores for up to a month in the fridge. Nice because you can make small amounts at a time.

    I wanted to make a vegetarian stew with sweet potatoes, garbanzo beans, kale, and found I didn’t have a jar or any cans of beans, but did have a bag with some dried, so out came the canner. In the time it would take me to prep the beans, I put six pints into the canner. At the same time I mixed up some honey buttermilk sandwich bread( my favorite), so it has been a productive afternoon. I hope you are gaining strength daily, and finding simple joys in everyday life once again. As someone who has walked in your shoes, I know how grief always hides away and comes out when we least expect it. You are missed here , but we can manage until your time is right. Blessings, my friend.

    Hi Heather, I know this a older video of yours, but I can't help noticing the level of the water in the canner being up so high on the jars even with the jar/water displacement it shouldn't be that high, right? Can you explain? Thank you! Love your videos!

    • @TheKneadyHomesteader
      @TheKneadyHomesteader  3 ปีที่แล้ว +1

      yep, it's just mass. You want 2-3" in your canner BEFORE adding the jars. I use 3" because for beans you will run your canner for a full processing time of 90 minutes. As you add mass into your canner, the water level will rise, just because you are placing mass inside of it. But the level doesnt increase. It is still 3" of water. :) its like filling up a bath tub and putting a toddler in it, the level may not rise much. but put a 250lb adult in it, the bath water may rise and spill over the top. hahahaha just the way it works. hahaha Hope that makes sense!

      Put in a center bowl, top with the ground lamb, then frame the center bowl with pita triangles on the platter.

    Another stellar canning video, Heather! I love having beans in jars ready to go. So much cheaper than store-bought, I know what's in there, and they extend many recipes to make meals super frugal. While raising our 7 children, we used a lot of beans and no one complained because they are delicious and filling in chilis, stews, "hummus," casseroles, etc. When combined with pasta or veg, beans provide complete protein so you can cut back on $ meat per serving. Time for me to do some more canning! With Love From BanDana Gramma

    I have started a LOW FODMAP diet due to digestion issues. I watched a lady use roasted cauliflower in her's instead of the beans. I will try it when I am cleared to eat cauliflower again. I can't wait to try both ways, I definitely need to start canning using a pressure canner. Do you find a ton of starch in your beans without soaking your beans?

    • @TheKneadyHomesteader
      @TheKneadyHomesteader  5 ปีที่แล้ว +1

      not a ton, bu there will be some starch. not an issue though. i find when i soak beans, by the time they are soaked, then pressure canned for 90 minutes, then cooked again in a dosh/meal, there is nothing left of them. Just mush. :( The no soak prevents all of that!

    So if you lose headspace on a jar you shouldn't save them? I did beef stew and lost liquid in most if them. Are they bad??

      its fine if you lose a little. but if you find its grossly low or your food is no longer in liquid, use it up first!

      Its a Progressive brand. I bought mine from Walmart but they are sold on amazon as well. I have links for it in my canning essentials video i posted up a couple of weeks ago, if that helps any. 😁❤️

    Doesn’t matter if you have well water or not. Should always add the vinegar to your pot water. Prevents the jars and pot from white film cover.
    Thanks for the information and making the video.

    Absolutely love💕 your channel & the collaboration. I can, freeze & dehydrate everything I can get my hands on. I have one question😊 I noticed that your canner was filled with water up to the shoulder of the jars. I only fill my canner up with 3" of water. Have I been doing this wrong all these years?

    • @TheKneadyHomesteader
      @TheKneadyHomesteader  5 ปีที่แล้ว

      thanks sweet Mama! NOPE! I fill mine with 3" of water, its just when you add 7 filled quarts to it, the water level rises. :D

    I have a question Heather. On the jar that had siphoning, you mentioned that you will use it up right away. Do you need to do that even if it seals ? Is it ok to stock a jar that has lost liquid if it creates a seal or do I need to put it in the fridge and use it soon?

    • @TheKneadyHomesteader
      @TheKneadyHomesteader  5 ปีที่แล้ว +3

      It should be fine! It only concerns me IF food is exposed, say the liquid level was below the beans leaving some exposed to air. This will usually cause discoloring. I hate siphoned jars. 😂 They bug me. So I usually use those up right away. Once that jar cooled, the beans were all well under the water line. The jar is absolutely fine but anytime your headspace isnt correct, there is a potential for problems. So I try to use those jars first! ☺️

      @@TheKneadyHomesteader Thanks Heather. I canned some pintos (no soak) and used 1 cup beans (quart) and water was to 1 inch of top of jar. My beans however soaked up so much of the water that there doesn't look like hardly any liquid is there. All sealed and No siphoning, just thirsty beans I guess. Love your channel btw.

      it may look thick, eh? they will be ok! beans are a learning curve....and some soak up more water than others. next time, try a tad less than a full cup. maybe do 3/4 cup and see how you like the results!

    I'm the only one here that eats hummus so could I make these in pints or half pints? and if so how would I do this. I'm new to pressure canning.

  • @EggFeathersHomestead

    Ok, newbie question here. I always soak my beans to reduce phytic acid first. I know everyone has their own opinion on this, it is what I am comfortable with based on a lot of research. So, on that, to each their own. My question for you is could one pressure can soaked beans, and if so, how would you adjust the recipe, if at all? Thank you 😊

    • @TheKneadyHomesteader
      @TheKneadyHomesteader  5 ปีที่แล้ว +1

      Definitely and all of the approved recipes out there will be for soaked beans. 👍🏻😊 You would have to look it up but I believe you fill the jar to 1” headspace for soaked beans but dont quote me. Its been ages since I canned soaked beans. Thats the only thing that I would change. ❤️
